I think you will find the costs you will incur hiring mercs to guard you will FAR offset the benefits of mining low sec to the point that you'd find hugging Veld in hi sec to be more profitable.
That and the problem that "guarding" miners is difficult at best. For some reason attackers seem to always jump on the mining ships first and largely ignore their guards. They get the quick kill and then either deal with the guards or just run away.

0.5 isn't lowsec and 0.1-0.4 ore isn't worth mining.

do some research about the 0.0 regions, which one's are largely populated and which ones are sparceley populated.
Scout yourself down a hauler and a miner within 5 jumps of an NPC system, preferably not in a pipe.
Stay aligned to a prepared safe, warp to the safe if local fills up.. continue when someone leaves.
For this you will need 2 accounts, 1 to haul to secure cans and one to mine, but tbh, its much more profitable and safe then low sec.
