Is there anyway of moving ships around without physically flying them? Can i for instance, package a ship up, and stuff in the cargo hold of another ship?

yep, provided there is space, or you can pack them up and make courrier missions, for others to haul them.
*edit* dont repackage a ship with rigs fitted ......

Create a courrier contract, and bascily pay someone to move your goods, be prepared to offer a pretty handsome reward if your stuff requires a freighter to move.

Just out of curiosity, what sort of amount would people consider a 'handsome reward' for this sort of contract?

I would do my utmost to keep the volume of each courrier contract in the industrial range, 5-10k m3 is in easy reach with little training, an Iteron V can haul around 40k m3 anything above that requires a freighter. If your order is small, you are basicly competing with hauling NPC goods, I used to go for 200k or above pr jump and never considering any payoff less than a million, that was flying a 10k m3 or so Hoarder.
If you require too much collaterel, you may rule out new pilots as potential takers, so you will need to up the payoff even for a small volume.
A freighter takes a long time to train for and costs in the area of 1 billion ISK, even for safe short trip it would take some million to catch the attention of a pilot with those resources.

I'm going to make the bold assumption here that you aren't as much concerned with moving all your ships across to a new base in as few flights as possible (that does happen but generaly it's done by people who have seen enough to know the intricacies of a bulk transfer), and assume that your real questions is how do you get a number of scattered ships moved all to the same base (which happens pretty much every time you buy a new ship). The approach then becomes not so much shipping the ship in a cargo vessel as it becomes moving your pilot between bases without using a real ship.
There are two ways to do this. The easiest is by far to just eject from your ship while it is docked, and fly your pod to the base with your other ship. This is fast (your pod aligns instantly), cheap and simple. A slightly less easy way is to use a shuttle. Shuttles are small fast craft that were designed from the start as a means of transfering between ships. They align only slightly slower than your pod, but have a much better sub light speed (a key factor if the 2 bases are many jumps apart and you want to autopilot between them, and it gives you a tiny layer of protection that someone needs to blow away before he can have a shot at your pod. Hopefully just enough to get the heck to safety.

If you have rigged ships, you can still have them freighted using a courier mission,the ship will basically be wrapped in bubble wrap and stuffed in a big crate. When you make the contract, it will warn you if you need a freighter or not. My advice on the freighter bit - if you can help it, try to line up a freighter pilot ahead of time and work out a price with them before you put the contract up, that way you're guaranteed to have a taker and don't have to rely on hoping someone will pick it up.
