First apologies if any or all of the answer to this question is in a guide please point me in the right direction as I must be blind. All I want to know is when you set a destination where can you change the settings to avoid certain types of space (low-sec) etc, and see pod kills per gate? I know it's covered in the tutorial but after coming back from a year break I seem to have undergone a mind wipe and can't remember a dang thing.

You can set your Autopilot to "Safer, stay in high sec wherever possible". You can also set it to "avoid systems in which pod killing has recently occured" (Or words to that effect). These settings should be in the Autopilot tab of the map control.
Then just fly the route manually.

Don't use this option. It renders the autopilot near to useless. There are pod kills through out safe space due to war dec's. These will be meaning less to you, but will force the autopilot to take you around them. Sometimes it will even prevent the autopilot from finding a route.
In any case, these setting are found in the "Settings" sub tab of the Autopilot tab in the World Map Control Panel.
