Now, I'm looking for tankability and DPS output in short- and long-range setups for all 4 racial ships, mostly in the BC/BS area since I dont particularly like flying small ships. I'm a big-ship kinda person (and the fact that I have to contend with a 500ms distance latency issue that prevents proper small-ship manual piloting).
Can anyone give me tips as to how to obtain the most solid tank for each race, and also the most DPS as well for short- and long-range solutions? I'm not looking for actual setups, but just tips, since I practically am somewhat of a newbie in ship fitting and want to learn myself out of it. Heck, I dont know if 7x% resists are enough, or I should go plate/extenders for tank, and how much DPS I should aim for in terms of pure damage output.

No, I'm asking tips like how much resists should I aim for for tank setups, or how much DPS I should aim for for gank setups, etc.
The rest I can play with in QuickFit/EFT. I just need the goals to set properly since I dont know if 100DPS is enough to break a tank in gang fights, or 200km is enough for fleet warfare...etc. -

Depends on ship types!
You have to specify more. I would advise u to stick just to one race and max it out, takes almost 3 years for that.

For BC class theres some basic rules.
Caldari is long range always. Gallente is extremelty close range always. Amarr close range. Minmatar hurricane close range, cyclone long range.

For Amarr high tank and high DPS you usually achive both in same setup, gallente go for extreme DPS because they have some how to sacrifice the tank to be able to do alot of damage and if you do alot of damage sometimes the tank is not much important because you will kill him before he kills you. Amarr is able to do a mix of both heavy armor and heavy armor and heavy damage, has for caldari u best go for heavy tank and long range for missile ships and for caldari rail ships max range full DPS setup 0 tank, but ofc warp away before they reach you :D

I may need more concrete numbers for tanking and DPS amounts for ganking. I dont think 7x%ish resists are enough for tank and 100 DPS amounts are enough for gank.
I've seen people claiming over 1000 DPS for ganking alone. I dont even know how to squeeze such damage out of QuickFit/EFT... -

You look like a Caldari playa to me, so my advice is don't bother cross-training unless you have some seriously transferable SP in Electronics, Engineering and Mechanics (not to mention Drones). You will be quicker starting a new Gallente or Minmatar alt character for PvP and use the Caldari main to earn the ISK!

Very rough DPS ranges.
DPS: BS: 450-1300dps BC: 300-900dps C: 150-450dps D: Who cares? F: 50-130dps
AF: 50-220dps HAC: 300-700dps Recon: 150-250dps CS: 500-1000dps
Dunno about capitals really.
As for resists, well on a T1 ship 70%+ resists are amazing. Standard 2x EANM II, 1x DC setup gives you like 70-55-65-65 resists I belive.
