I'm a noob trader that wants to explore risker trade routes and courier contracts. What are the stations with odd names? How will I know if I am able to dock there?

Stations themselves don't generally have names, they're named for the system, moon and owner. Like Jita 4-4, Caldari Navy Assembly Plant.
Systems that have names are generally hisec or lowsec, controlled by an empire. Names like Jita, Oursulaert, Mara, etc.
Systems with a designation like 6NJ8-V or M-DEE8, or PC-8ER, are "0.0" space. They don't have names, just designations. NPC stations in 0.0 are dockable by anyone, and you can use the map to find them and their services.
Getting to them, on the other hand...
As far as player-operated stations, that's a different ball of wax. You'd need to talk with the owners to get permission to use their stations.

You cannot do courior missions from PoSes, you can do them from player owned Outposts though. PoSes are cheap, non-dockable stations with uses & resources. Outposts many times more expensive & require PoSes to hold soveriegnty of the system, but they're more closely related to the Stations in empire.
The best thing you can do is set your waypoint there and view all soveriegnty on the map. If the soveriegnty is a player alliance it's player owned. If the soveriegnty is a NPC alliance then it is NPC owned. ___________

Also, NPC stations will most likely have a name including a NP corporation, as well as the system, planet, and moon. A player outpost will most likely say something intended to be humorous, and will not include system, planet, or moon information.

Several alliances allow friendly pilots to trade at their outposts. Providence area comes to mind, but getting there may be dangerous.
