It would be useful to have a list of the major and minor trade stations because you can bookmark them for easy travelling.
I would define a minor trade station as one where you are very likely to find the ammunition you're looking for.
So far I have heard of:
Major Jita 4-4 Rens (6-8?)
Minor Oursula (is this how you spell it? What is the station?) Tash-Murkon (station?) Agil (station?) Tasti (station?) Ourslaert (station?) Yulai (station?) Stacmon (station?) Ostingele (station?) Derelik (station?)
I would be very grateful if you could revise/update/add to my list!

Dodixie is nice.
Hek is quite reasonable.
Orvolle and Osmeden aren't so bad.
Nonni is pretty good.

Plus any major mission hub in the caldari regions tends to have large inventory, places like sobaseki and motsu are examples.

Thank you everyone! Here is a summary of your input so far.
If we define a major trade station as ôa station you are likely to be able to buy T2 ships and fittingsö, and a minor trade station as ôa station you are likely to find the ammunition you want to buyö, this is the list so far:

If you want to make lots of ISK, there is nothing wrong in supplying a station with all ammo types and advertising it.
To make even more ISK, get a corporation together to supply a station with T2 ships and fittings of all types. Advertise it as a major trade station.
Nothing wrong in using your initative to make ISK, and provide everyone with an excellent service at the same time.
Your trade station might be more conveiniently located than Jita.

I'd say a major hub would be where you can buy pretty much any non-capital ship and all fittings for it without moving. ---

This isn't my experience - Yesterday, I was in the Kor-Azor region (solar system Misha), and I couldn't find any ammo at all for my heavy assault launchers.
In fact, I had to buy heavy missile launchers instead.
And then... guess what?!... I ran out of ammo, so I had to leave the region. 
So although generally speaking you might be right, it isn't always the case.

Kor-Azor is in my, limited, experience not a very good region to buy things. It's mainly low-sec anyway, isn't it?
Anyway, there are areas where it might be pretty difficult to find any kind of ammo you want. Still, the definition you gave for "major trade hub", just covers too much.
In, for example, Dodixie (which used to be my home system when I first started playing late last fall) you can buy tech 2 ships and fit them with tech 2 modules easily, and if there's something or other that isn't there it will likely be found one jump away in the neighboring systems instead.

trading stations are typically ones that are popular with mission runners and have high quality level IV agents (or level III) - you don't even have to go into the system, just look up what stations it has and look up agents available at those stations - stations owned by NPC corps like Caldari Navy or Amarr Navy with high level high quality agents are typically ones stocked in equipment, ships, and ammo
