Unfortunately, EVE is not there, but X2 the threat is. Now, look the first page of the article.
There is a pic of Desert Combat (it's not real it's a make up) but it would be really nice to play EVE that way. Most players that use multimon use 2 monitors. _______________________________________________

um, well Eve wasn't listed in the article but the article does have a link to to Matrox's surround gaming site which DOES have Eve in the list and even has a section for Eve that has some nice screenshots. Eve even has a setting in the display prefs for how many monitors you are using. You KNOW all the devs play the game this way and if they don't they should :-)
Only drawback is, unless you have the Matrox Parhelia triple-head card it is hard to make Eve work in multi-mon. Because the parhelia has all the outputs on the same card, the system looks at them all as a single display and hence it is really easy to make a game play in "surround" with that card if it is possible to manually alter the display resolution.
At my office I have a triple mon setup using 3 geforce4 mx420s. Because they are separate cards, the only way to really make it work is to be able to SPAN the cards together into one display. Nvidia claims this is possible with their driver but the most anyone has ever been able to do that I have read about was span 2 displays from the same card (as the article from Tom's Hardware guide points out). I haven't tried it in a long time, maybe I should again. I could use the extra screen space.
Oh yeah, the article didn't mention it but if you play Star Trek Armada it has native support for multi-mons and throws the little "action" window that shows the close-up of things happening on the second monitor. :-)

For 3 displays, eve works ok.
For 2, it stinks. For most of the same reasons that X2 with 2 rocks.

Ya know, I just took another look at it isn't there anymore!??! It used to be a pulldown right next to which display adapter you chose, you had a pulldown for how many monitors. I don't know when it changed but oh well. Perhaps they added support so it would auto-detect the fullscreen res cabaility. I tried to get it to work again just now but there is no way to span the 3 cards I have together as one.
I supposed if you had an nvidia card that at least of the 4 generation that had 2 outputs you could probably span those together and get Eve to work on 2 monitors...

It never worked right. I used to try with my 9700 Pro all the time. They probably just yanked it.

Thats the main problem... most multimonitor are 2 heads, and thats where things sux.
Making a second monitor a place to put menus, chats, browser, hangar, windows in general, and leaving hte primary for the inflight ui would be awesome. _______________________________________________

Awesome is the correct word, I think. It should be doable too. Just give an option to run in two windows - one for in flight one for the rest. Only in flight is 3D.
