I know that if a secure can is not anchored, it will eventually disappear in a hour or so. However, while the can is un-anchored can it be opened or taken by someone who doesn't have the password? Does it need to be anchored to be secure?

yeah it needs to be anchored, otherwise anyone can come around and just scoop it to their cargo bay

and to follow that, do I need the anchoring skill in the corp management skill tree? or is there a different skill(not related to corps)?

You just need Anchoring, and there's only one that I know of.. only under corp management as there's no real 'Miscellaneous/Utility' tree, and they can be set for corp access.

A good way to examine Secure Cans is by their beacon lights.
2 Green Lights: Can is free-floating. 2 Yellow Lights: Can is in the process of being anchored 2 Red Lights: Can is anchored.

Does training Anchoring above level 1 make a difference ? E.g. quicker to anchor ? I only have it at level 1 right now, and the info on the skill doesn't really say anything about higher levels making a difference.

Can anyone verify this?

Higher levels of anchoring will be required for different types of items.
For example sentry guns, mobile refineries, mobile hangers, and of course stations.
