Myself and a friend both started Caldari, and both decided to change races after about a month. He went Gallente, and I went Minmatar. Some things to note about the 2:
Gallente do nuts damage at close-range, but can be quite cap dependent at times. Most of their ships have huge drone bays, and are moderately fast. They can field pretty good armor tanks, stronger than shield tanks for a moderate cost. Because Gallente can only effectively do thermal and kinetic damage, and their guns use lots of capacitor, they are not the best (solo) mission runners, but are great to have as support.
Minmatar do good damage, and their guns don't require cap to fire. This can be a pretty big advantage in some cases, but is often overlooked because other races do more raw damage or have better tanks. This has saved me several times in real-world combat situations. Since they can choose their damage type and don't need cap to fire, they are arguably the 2nd best (or best) mission runners. I consider the Maelstrom to be superior to the Raven for missions, and it can field the strongest shield tank in the game. (I ran the numbers, and Officer fit, it can potentially peak out at about 10,550dps tankable). Minmatar ships have a lot of variety, but because of that, you have to train a lot of different stuffs if you want to be good with all of their ships.
Caldari gunboats are ... meh. I wouldn't really consider them as a reason to pick Caldari. The Raven is considered "easy-mode" for missions, though this sometimes confuses me since the Maelstrom has an additional tanking bonus, 2 more guns, and a bigger drone bay. However, that doesn't mean they are bad. Caldari ships generally do the least damage, but missile ships always hit, and their gun ships can hit from the farthest away. They are generally very slow, and heavily tanked. Caldari also have some good ewar ships for PvP, though they are all very fragile.
Having not flown Amarr, I can't say too much in depth about them, but this is what I've observed:
Most think of Amarr as huge, slow, heavy tanks. However, their HACs and smaller can be very effectively nano-fit. Amarr probably do the most raw damage (assive from point-blank Gallente with neutron blasters) and have good range with it, but many of their ships have trouble running a tank while firing their guns. While their cap lasts, though, they are scary. Amarr have some mixed drone and missile boats for variety.
Maybe slightly biased, but I hope it helps. -----

I fell in love with minmatar because of their history. I remember identifying them as the rebels from Star Wars fighting against oppression :)
That doesn't have anything to do with game mechanics though and it is important to remember, that any character can learn any skill in game given enough time.
If you want to optimize your character - ensure it has a good distribution of attributes. (caldari achura monk comes to mind if you want to pvp - just focus on minmatar/gallente instead of caldari)

I can fly three races of frigates, two races of battlecruisers, and Gallente battleships, so you can probably already tell I've had trouble settling on just one. :)
I chose the Gallente route for BS training mostly because I wanted to rely on one race of ship for BS PvP and PvE, and between Gallente and Minmatar, Gallente requires less skill points to be truly effective in. That, and I like drones more than missiles. ---

I fly minmatar BSs with my main mostly because projerctile weapons don't eat capacity ^^ and those ships are the most balanced in the game IMHO. The drawback is that they require really a lot of skills to show their flexibility and strength.

I like Amarr for their simplicity. Lasers and armor tank, which are not that hard to keep running forever with the right setup and good cap skills. That, and they don't need ammo.
There's also something else about Amarr ships, i don't know.... They're just, so lovable :D

Gallente / Amarr
So far im specced in gallente but lately started training for amarr ships as i consider them the coolest race in eve
also a good idea to crosstrain because both armor tank and use drones.

Considering the fact that Mimmatar are very versatile (bit of a handicap considering their jack-of-all-trades-master-of-none ship design mentality) and are the fastest ship family to begin with, they have a great place in any small-gang PvP.
Gallente have a place because of their frack-all damage output. You do not want to be on the recieving end of a gallente blasterboat. Along those lines, you do not want to mess with a droneboat unless you have a smartbomb ready to go.
Caldari have a place in PvP, but are way more specialized. The Rokh is the most long-range sniper BS there is, and the ECM ships they can field are great assets.
Amarr are one-tracked in their design philosophy: Purify the unbelievers with holy laser fire and remain steadfast in faith and armor. Lasers use little-no ammo (T2/faction crystals wear out), but use up a lot of cap. Armor on Amarr ships are more or less the best there is out there. Dont expect to be as versatile as Gallente/Mimmatar though. -

I chose Gallente because I like their morality (or lack thereof) and their focus on inviduality. I also like the ship design better than most of the other ships in the game.
