I recently found a hacking site in a 0.0 system in my Gallente Recon (Arazu) cruiser. I easily defeated the small swarm of defenders (Serpentis, I think), and got some pretty good loot. I forget exactly what the major item was called, but it was a BP something like "anonymous data interface"...I'd looked it up, and was for research on rigs. I also found some of the components required to manufacture the item. 
However, there was also a jump gate in the area, so of course I had to see what was at the other end of that. Big mistake. As I jumped in, I got some cryptic message about there being two gates, with one heavily defended. I only saw the one gate however...and it was clearly the one that I should have avoided. I was met by a swarm of battleships. Had greed not driven out all my good sense, I would have just warped out of there...but who knows what riches might be concealed here? So I try to tank the horde. Well, I was doing OK...I'd swapped out all my e-war stuff for a flimsy shield tank outfit...but it turned out they were only toying with me. Suddenly my shield drops, and in a matter of seconds my armor is eaten through and I'm floating in a little blinking egg. And no, I never got my cargo back. 
So my question is: what level of severity should I expect in a "profession" site? If this is usual (and as you can guess, I don't have all that much exploration under my belt), how am I supposed to deal with it? Sure, I could bring my HAC or a BS...but this is in 0.0! There's no way it makes sense for me to bring a vulnerable ship out there where the evil pirates will just pick it off. Or is this just another part of CCP's "Feed the Piranhas" initiative?

I do a fair amount of Professional sites in deep 0.0 Angel space. It has been my experience that you generally have to be prepared to tank multiple battleships, cruisers, frigates,& tower-sentry guns. It is actually a rare occurence for me when I'm doing these sites to not have a fair amount of DPS to tank at the beginning and in subsequent waves. Far more DPS than what one could expect a recon to sustain.
Most explorers that I know down here go and find the site in their cov ops frigate, bookmark it, then swap out to a battleship to actually complete it.
I notice from your original post that you are probing them out in a recon. You might want to consider switching to a cov ops frigate as the scan time bonus is quite signicant and will make a big difference the amount of time you have to invest in originally probing the location out.

Also standard setups wont help you at all. If you do not tank specifically for the region, preferably minor dmg type tanked @ 86%+ and major damage type @94%+ you are bascially screwed. With that tank (86/94) I still strongly recommed the rep speed/amount rigs....

i really would like to do more exploration but out in 0.0 the sites that i kept finding were like, 'kill the ******'. i did get a corpy to help a few times but it is difficult because you can't really plan it. after a few times of finding something and people not prepared to drop all they are doing to come where i am to help ... it turned out to be a waste of time.
