I am looking to setting up a empire POS for lab usage. I looked at the attributes of both types of labs and they don't show the number of ME, PE, copy and invent slots. I see it says number of concurrent users is 1, does that mean only one person can use the lab?

At the moment I am writing this singularity is not online. However, the last time I was there they had changed the descriptions to include the types and numbers of slots. Try checking there if it is up.
Max concurrent users doesn't refer to the number of people who can have jobs running (so far as I know) but to the number of people who can have the interface window open at one time. Many POS structures have this attribute.

1. What are the stats of the new Advanced Mobile Laboratory?
3 copy slots (0.65 time multiplier) 2 ME slots (0.75) 2 Invention slots (0.5)
Fitting: 600tf, 120,000 MW
Base cost: 150M isk
The old labs have the following stats:
3 ME slots (0.75) 3 PE slots (0.75) 1 copy slot (0.75) 5 Invention slots (0.5)
Fitting: 500tf, 100,000 MW
Base cost: 90m isk

So far as I have experience, invention at POS labs is abysmal. 1 success from 5 runs, every time, even with 5/5/5 skills.

AFAIK there is no difference in success chance for invention jobs at a POS. I have successfully invented mods in a POS for a few months now with no problems. The big advantage of the POS is making the BPCs, so you don't need to join the queues in the NPC stations.
I find that a combination of a regular lab (for lots of invention and ME slots) and an Advanced Lab (for lots of copy slots) works well.

At a lowsec POS you will be able to invent twice as fast as at a highsec station. No difference is applied to chance.
Chance is slightly under 25% from both pos's and stations, obviously you can get 4/5 and 0/5 from either as 5 is not a very big sample. A big sample is more like 1500.
Using the max run decrpytor the chance is actually more like 1/10.
