Having a tough time with Guristas and Angels (naturally), and I was interested in knowing if the missions out in Amarr space would give me missions with rats that I am more effective in killing (damage type wise). One of the reasons I stopped doing missions out there is because the market is atrocious, and compared to Rens area, its damn near barren.
Cliff Notes:
Does running missions in your "home" system give you missions particularly where you are more effective (rat type wise) ?

You'll get Angels anywhere you do missions, not sure about Guristas, but possibly. There will, however, be more Blood Raider missions, maybe some Sansha, but I haven't gotten them where my agents are.

Missions will give you all kinds of rats, but i think more of your home garden variety. Try ratting for serpentis (Gallente space). Guristas are very annoying with their missile spam and ecm jamming, while angels are hard to tank and hard to kill especially with lasers that do em/thermal. Serps don't do the jamming thing or missile spam, and thermal is one of their weaker resists.

Serpentis don't ECM Jam per se, they do a thing called Sensor Dampening. You can still target but your max range gets lopped off and it takes you forever to lock on to stuff.
Unlike jamming, there's not a chance you'll resist it. The only way to get rid of it is to nuke the ship that's dampening you. Wrecks don't fight back.
And the Serpentis are, contrary to popular belief, weaker versus Kinetic than Thermal in general. check the Wiki if you don't believe me.
To the OP- have fun if you want to run missions in a major hub, just don't expect to get reimbursed if your ship pops due to lag. I'd recommend learning industrials and making a supply run every once in a while to a nearby hub (there's almost always one nearby) to sell your stuff and reload your goodies/upgrade etc. That way you avoid the lag associated with market hubs but you can still access them when you need to.
