What purpose do these various types of human cargo, so to speak, serve?

Some of them (like slaves and such) can be sold to certain factions
unfortunatley ive had a hard time finding a faction that wants to buy them 
however if you examine a faction it will list what items they buy

I saw another post which mentioned certain faction-specific things to do with some of them, such as Minimitar being able to trade in slaves and LPs for freed slaves. It'd be interesting if they served a practical function as well, sort of like Great People in the more recent games of the Civilizations series. Like adding slaves to a production project in Amarr space to decrease production time (but perhaps increase waste). Or using freed slaves in Minimitar space to decrease production time at an isk cost. Both as a one-shot deal.

Pilots who roleplay would see you having these items in cargo as a hostile act you should also check out the legality of items like these as they may not always be welcome everywhere good luck

Yeah, if you do a show info on them there's a legality tab that will give you a list of the factions that might have a problem with you bringing these items into their space.
Usually it's a confiscation of the item and a fine.
Often, if you see a little skull on the item - that means it's got some legality issues.
As to finding out what to do with them - you can click on Market Value and just see if anyone's buying. What THEY are doing with them I have no idea.

NPC goods can be traded between stations, and also agents that give you missons might ask for you to bring something or other for the mission. Otherwise they have no purpose.

Exotic Dancers are great for relieving the boredom of gate camps or mining ops. No pilot should undock without at least one on board.
