I'm new to EVE and in the tutorial. Question is, I seem to be able to lock 2 pirates at a time however, I suppose I can only orbit and fire at one at a time. eg. kill one before then orbiting and firing at the next. Is this correct? or is there a way I can keep both in range and under fire?
Thanks.

you can fire at as many targets as you have guns/launchers. Basically if you have 2 guns, select the first target, and fire your first gun, then select the 2nd target and fire your other weapon.
You can of course only orbit on target at a time, but NPC enemies tend to rush you, so if you orbit one, the other one will come close to you anyway.

Bad advise, stick to one target unless you can insta kill targets. Yes, you can only orbit or keep at at range from one target, but normally that's not really a problem since you're still moving. It's not as effective but it still works.
If needed you can always manyally fly in a direction if that would be better than using the orbit command.

You can lock 2 targets intially and this number can be increased by skills and or fittings.
Locking multi targets is good as you can quickly move on to next target after a kill.
It is usually the case it is best to consentrate all fire on one target.
The only time it would make sense to split your fire power is if different targets are at different ranges.
Some times you are going to get swarmed by groups at very close range whilst more groups are incoming at longer range (this usually happens when you warp into the beggining of a mission).
When this happens it may make sense (if you are using longer range weapons like railguns)to fire smaller calibre guns/missles at mobs that are less than 10k whilst using your bigger guns to kill mobs at the 10k-50k range.

Typically you want more targets to lock for several reasons:
- As your ship gets larger, it takes more time to lock smaller ships. Having the next target already locked makes you waste no time engaging the next one. - As you advance, you will have drones as well as guns to manage. Typically drones will be effective against a smaller class of target than what your guns are equiped for. Fire your guns at one target, concentrate your drones on the other. - Some ships always have mixed weaponry. Then the range issue mentioned above comes into play. - If you fly a support or EW ship, you will often only need to employ one module on each target. Having multiple locks means you can affect multiple targets.
