So my free trial just ran out. I'm on the fence over whether or
not to continue. Me and my friends love the overall gameplay
but are getting tired of missions and ratting.
So I ask, what is there to do for 3 new players with combat
oriented mindsets and able to invest a good amount of time
into the game.

Edit: Get your buds into some rifters or the best PvP frig for your races and form a small wolf-pack. Plan your fits around each others. Learn how to use your scanner well. Send the best person with a scanner ahead of you into low-sec. Let him find targets for you and have fun. Plan to lose a bunch of ships but you will have 10X the fun you've had missioning and ratting if you and your mates are combat oriented.
Check out public channel rifterdeath to chat with some like-minded folks that have had some big fun in tiny ships.

You can do whatever you want and, if you look for it, you can make cash with just about anything. the whole PVE aspect of the game is utterly boring and you should avoid it as much as possible.
You can make cah with trades, orestealing, ransoming or whatever. if you have 2 other friends all get in frigates, train up some Ewars skills and head into low sec. With a bit of luck you'll get a kill or 2 and/or get blown up hehe, either way it'll be fun.

1. How high of a priority are corps in this game, should we grab one soon?
2. what are the best kind of ships(frigate,cruiser,battleship) for pvp and what race would be best for that type of ship.

started a piracy corp with frigates / assault frigs as the gangs main ships, but u can fly anything u fancy
oh we dont generally take on trial accounts

corporations are nice, but not necessary for the game. In fact many never leave the starter or NPC corporations (which can not be declared war on).
As for the best ship, depends on what you want to do. I'd recommend looking through the ships and modules configuration sticky. Check out some of the configurations for the various ships there.
Early on, definitely stick to frigates which are cheap as can be till you can handle them well. Then move up to cruisers after a good bit of training.
And remember: don't fly what you can't afford to lose... and don't fly what you can't handle (too many jump into a cruiser with medium weapons 1 ... and no support skills)

Depends on the person... some people like to solo in an MMO (personlly i would get bored in 5 seconds), but the thing is if you're in a group you learn faster, you'll see more of EVE, you get to see how thigns work together and perhaps find your own niche in it.
Also, there's strength in numbers, this means that you will be able to do things in a group you'd never do solo or with 2 others. EVE is all about interaction, in ever which way (shooting someone is also interacting :P)
Don't stay solo but join a proper, well run corp. There's lot of bad ones out there who simply try to make use of you or are run by people who have no clue. Don't hesitate to keep trying till you fidn a group that suits your needs and will be of benefit to you, as well as you being beneficial to them.
