There are several ways to give items to other players.
In space: Jettison a can, if you have the item in the cargohold you can easily just rightclick it and select Jettison. That way the person who you want to give the item to can take it from the can. Some problems with this occurs though, if you are not in the same Player Corp or in NPC corps (doesn't matter if it is the same NPC corp) when he takes the item he will ge a 15 minute agression timer at which you are allowed to attack and destroy his ship. A workaround to this is either be in the same Player Corp or to form a gang before jettisoning the item in question. that way he can take it without an Agression Timer. You can also use an Anchored Secure Can and give the person you want to give the item to the password as well.
In station: You can make direct trades with the person, Dock at the same station and locate his character in one of the tabs in the bottom right corner of the screen. Rightclick his name and select "Trade" (or something similar). That way you can trade whatever you want with him though this costs a small fee (I think 10k isk),
As a contract: Open up contracts and create an Item Exchange contract. This will allow you to give people stuff without you having to be online at the same time. But this cost 10k ISK as well to do.

@Scilent Enigma Thank you very much for your quick answer. This also answers the second question I have. When I'm mining I use can-mining and later fetch the container with my transporter. I already wondered if the container or the content could be stolen in between. Should I use a secure can with password to prevent this ? If I do the mining together with a buddy he should be able to use my container to store his ore since he has no transporter.

If you're mining with a buddy try this:
You mine, he mines. When the can starts to fill he stays with the can (won't prevent theft, but may deter some people) and continues to mine. You get the hauler and collect, transfer to station and return with your miner.
Alternatively, get a few mates to mine into cans and you collect in the hauler continuously (will prevemt most thefts). Split the profits evenly. While the hauler isn't actually mining (you could mount a mining laser on the hauler, it's pretty slow, but every bit helps), the miners are far more efficient with this method, so everyone is better off.
Form a gang -- this will prevent unnecessary criminal flagging if you're not in the same player corp.
Cheers Falka

Either give money, or trade half of the ores/minerals you got from mining.

Just an FYI, all references to "gang" have been formally changed to "Fleet". The mechanics are the same though.
