I was thinking of seting up a small mining pos and i was crunching numbers as to the kind of profits i would be getting. According to my calculations, A small mining pos mining things like Promethium would bring in like a billion dollars a month. Is this right. The pos would have 2 moon harvesting arrays.

If you can find a moon with valuable mineral types, yep. If you can find one with two valuable types wich can be combined directly, instacash!

Promethium and Dysprosium are cash cows. At the moment, a dyspro moon rakes in 3.8B a month, with promethium slightly behind at 2.9B per month.
The really common stuff won't net a profit, even on a small tower, but most of the other stuff will get you 100-400mil per month. Just don't expect to find any open dyspro/promethium moons in the universe.

At jita buyprice as of 23rd of december a Dysprosium moon nets:
48.5k*24*100*31 = 3,608,400,000 ISK / 31 days excluding fuelcost
a Promethium:
29k*24*100*31 = 2,157,600,000 ISK / 31 days excluding fuelcost
Minimum fuelcost / 31 days is somewhere in the vincinity of 35-40m / 31days, so you're looking at a stupid profit margin if you sell to buyorders. Sell on sellorders and you've got yourself a nice score as those are sometimes up to 10k higher.

Which ones would you say would net a decent profit on a medium tower?

Something that might burst your bubble....A second harvester cannot harvest anything that the first harvester is going for. No matter how many times a particular resource is listed in the moon, only 1 harvester can go after it.
If you've got 2 or more different resources in a moon, you can run as many harvesters as you've got seperate resource types.

No not really ill just look for a moon with something i can combine with the valuble ore.

Promethium - 32k
Neodymium - 4300
Caesium - 3100
Technetium - 2700
Thulium - 2600
Hafnium - 1700
Mercury - 1300
Chromium - 1300
Vanadium - 1200
Cadmium - 1100
Titanium - 1100
Platinum - 1000
Anything above Thulium would net profit on raw materials on the medium pos i guess. Find a moon with reactable minerals and you cn make profit of the rest as well i think.
