I have been doing missions for agents and I'm always in Hi-Sec space, but everyone says insurance is important. Should I still purchase it, even though it seems like there is no danger involved in what I currently do?

sometimes you blow up in missions. not often, but sometimes. alt tab for too long, or dont realized your warpscrambled. oops

There's always a chance something will go horribly wrong in a mission and you'll pop.
That said I usually don't insure ships where the payout is less than 10% of the value of the ship (counting all fittings), which usually works out to being either basic T1 frigs and cruisers, T2 ships, and faction ships.

The way insurance works, you're basically betting with 50-50 odds whether you will get the ship blown up within the next 12 weeks. If you think there's a better than 50% chance of that happening, then take out insurance. Otherwise (e.g. if you'll just be using it to run the same old missions that you know like the back of your hand), don't.
There is another aspect to insurance that can swing the balance - if you're bad at forward planning and providing for contingencies, then putting an insurance payment down when you have the cash means that if your ship does get destroyed, you will get a nice lump sum. If you follow the "only fly what you can afford to lose" principle then this is moot, but not everybody subscribes to that philosophy... 
For both of the reasons above, if you've decided that insurance is worth getting, then you should get platinum. If you've decided it's not worth getting, then you shouldn't get any. The intermediate levels don't make any sense to buy, logically (though I'm sure some people will 'hedge their bets' by taking a lower level of insurance).

I used to get insurance, but now that I know the risks, I don't usually bother. It's a matter of experience.
For the first 12 weeks in your new ship, buy insurance. If you get blown up, buy insurance, sooner or later you'll know when it's time to drop the cover.

Insurance is a waste of money on a ship you'll change in a day or two. Keep insurance on the pricy ships you'll stick with for a while.
For us newbs it means high level cruiser and battlecruisers -- they are perfect to wait until a lot of skills end up levelling off. Additionally purchase of right outfit for such ships runs between 10M-50M which is a ***** to spend at that level. There are just better things to put money at work for.
The easiest way to lose a ship in HiSec is to run a courier duty through a 0.4 zone. There are folks just specializing at laying waste to CONCORD forces at the gate and then mopping up all traffic that either warps in or jumps in. I parted with my Omen this way -- jumping in, and while being invisible saw these two roaches blinking red. Inhaled, exhaled, hit burners, and immediately blew up.

Contradiction in terms? 0.4 security space is not high-sec, which is why these pirates were able to fire on you without losing their ship. Likewise, CONCORD do not patrol outside of high-sec so you will never see a CONCORD ship in 0.4. (And it's impossible to defeat or tank CONCORD, even if you did fancy giving it a go in 0.5+).
But the general point of your post stands. Low-sec is dangerous, since the major deterrent to attacking other players is the fact that the aggressor's security status is lowered. Many pirates do not care about this (or worse, wear a low security status as a badge of pride). Chances are, if you encounter ships with hostile intentions in low-sec, it won't take them long to dispatch you. (On the flip-side of this, have a look at Ard UnjiiGo's post about rookie life in low-sec).
The easiest way to lose your ship in high-sec is probably getting it CONCORDed accidentally. The most likely way to lose your ship in high-sec... I'd have to say biting off more than you can chew in a mission and not being able to warp out in time.

I honestly can't remember the last time that I bought insurance on any of my ships. I build my own cruisers for pvp battles and the null-sec rats aren't overwhelming to my BS that I even come close to loosing it.

The mission might not kill you, but the lag or unforseen events might
If you cant keep your tank running all the time, then you need to last until the server realises you are missing, then the time for you to try and warp out or 1 min to disappear
