Currently I use drones for mining. My skill at drones is 4 training to 5 now and I have drone interfacing 1.
I want to be able to use drones to protect my Covetor while I'm mining in high sec space from rats.
My question is what should I train next and what kind of drones do I get.
Any help is much appreciated.

It shouldn't take much to protect you from high sec rats with drones, especially with 5 of them. I'd get Drone Interfacing to 4 and Combat Drone Op to 4 as well as Drone Durability to 4. Course, I'd say these skills are pretty standard for most pilots.
Regarding Drone Durability, how durable your drones need to be depends on whether you can tank the rats while your drones deal with them, or if you need the drones to take the damage. In a Covetor, you should be able to wait until the rats engage you first, then send out your combat drones to deal with them, saving them to fight again another day. I guess this depends on how serious your rat problem is, but again, high sec, should be pretty safe. Anyone disagree? Haven't mined in quite a while.
As for what drones, I'd say 5 light combat drones and 5 mining drones. As long as you take care of your combat drones, none of them should be destroyed so you won't need backups. What type of combat drone depends on the rats you're facing. See below:*

You should almost always use Hobgoblins for what you need. The reason is that the higher damage modifier will outweigh using specific damage types. Hobgoblins do Thermal damage.
The main exception to this is if you regularly run into Angels. You'll notice in the above post that all of the factions have a weakness (either primary or secondary) to thermal damage except Angels (there may be another exception to this iirc, but it's not on the list and I don't have the info to hand to check it). For Angels, Hobgoblins will generally do the job, but if you're mining in Angel space, then I'd load up with Warriors instead as they do explosive damage and will do a slightly better job even with a lower damage modifier.

I like to use Hammerheads, you fit less of them then the lights, but they seem to work better for all the diffrent types of rats and can take on some of the bigger rats if you decided to mine in a lower sec system.

I usually run into Guristas.
Is small or medium better.
I was thinking of going with Vespa I since Guristas are weak to that (correct?).
Or going with Hammerhead I.
