Heya, started doing Gallente missions lately.
My Gallente Federation standing was -0.24.
I've done a number of level 1 Federation Navy missions, bringing my standing up to 0.97 with the Federation Navy.
However, my Gallente Federation standings are down to -0.45 now... they've actually decreased. Eh.. what? Can anybody explain this?
My only social skill is Social level 2.

Look at your faction history:
Character Sheet > Standings > Right-click Gallente Federation > Show Transactions.
If you see a bunch of faction losses there called "Ship Kill", you fell victim to the Gallente missions bug where you are sent to kill Gallente ships.
The result is you actually lose Gallente faction for completing the Gallente missions.

Yep I have a number of -0.8% ship kills... ugh.
Sooo... if I keep doing Gallente missions I'll end up getting shot by their patrols in highsec? 
Or do I have to find out which missions I can't take and take the loss on refusing them?

The mission that gives you negative faction standing is Soft Drink Wars. Whenever you kill Mercenary Rookie it gives you the wrong faction loss. Make a petition for it. It takes a while to get it resolved (at least in my case) but you get all of the standing back.
