While mining asteroids it will run a full mining cycle even when the asteroid is about to blow up.
Ive found myself many a times mining very small amounts of ore with my strip miners running the full 3 minute cycle to only find the asteroid blow up, Shouldn't the asteroid blow up and cycle stop when it actually runs out of ore and not sit there for 2 minutes mining air/space ;P?
Rather annoying and wastes alot of time, only really noticeable when you have strip miners and are mining large amounts of ore per cycle.

Annoying... yes.
Unfortunately the miners are set to cycles for that set time. One thing you can do though if fit a Survey Scanner. That will keep you from going after roids that have a low amount of ore left in them. *** "Some would call me a Demon. Others, a Vampire. Thats why you always fit a survey scanner and only mine the roids that hold at least a cycle worth of ore.
Unless slowly clearing a belt of roids makes you feel good about yourself, hell why not I've done it . -----------------------------------------------

Mining lasers work as they do in order to cut down on the calculations needed. As it is, an almost unlimited number of mining lasers can be directed at any given asteroid, and the ore-left/lasers-active calculations needed for no-time-wasted operation....could be better used elsewhere.
So spend a few computation cycles on a survey scanner. It's a miner's second-best friend. _______________________________

Of if you fit a warp disruptor for the lulz on your barge (and thus no scanner), you can always switch the laser/strip miner off manually. If you turn it off, for example, halfway through a cycle then it will deliver half the normal ore to your hold. If you are mining one of the last asteroids in the belt of a certain type (high demand types like dense veld or other +10% types) it may be a good idea to turn your lasers off and on manually with greater frequency, so that if you did get the last 1m of ore, you don't have to waste a whole standard cycle period to find out.

Or - 1) Survey scanner 2) Excel spreadsheet magic 3) Timer 4) Turn off Lasers when timer beeps 5) ? 6) Profit.

To reiterate:
If you have a survey scanner you can check out which rocks have the ore in, if you're going after one with less than a cycle then you can just disengage the miner after the time needed to mine that amount. Say you get 900m3 in a cycle from your strip miner and there's 6k veld in a rock, that's 600m3 so it will take 600/900 of a cycle or 2/3 which will be 2 minutes. So start your strip and then after 2 minutes disengage it either by pressing the associated F key or clicking the icon next to that of the rock you're mining.
