I was wondering if anyone could enlighten me on the pros and cons of Stabber and Rupture, the play styles of the two. Thanks in advance! I've seen a few threads but there about 2 years old and would like some recent information.

Please state if you want a PVE standpoint beforehand if you're asking for PVE on these forums. PVP is an extremely big part of EVE unlike in other games.
Stabber- Fast as hell. Fit it with a MWD and keep out of web range and this thing can slowly pelt away other ships of it's class. Poor damage while firing from 15km, but if the enemy can't hit you you can just pelt away little bit by little bit until his cap goes under. Has trouble against missile ships and can't break the tank of battlecruisers+ though.
Rupture- Gank meets tank. Can fit a 1600mm plate and medium guns. With 2 seperate damage bonuses level IV min cruiser gives a 50% damage bonus, 66.6% at V. Just get in close and pound the ****ing sh** out of your enemy. ___________

Definitly PvP. It's for me and a friend who are planning to rat/pirate at low secs in cruisers.

They are both pretty good pvp ships.
In the Stabber basically orbit at 15k and fire at your enemy. However, you basically must have T2 auto-cannons with Barrage M to hit at 15k. You may also want to mount an ambit rig. The key is to stay out of web range.
In the Rupture, I'd suggest going for a gank fitting with at least two gyrostabs. Again, it is preferable to use T2 auto-cannons. I'd load hail and basically try to ride right up to my target pointblank and unload. This will work on most occasions. Against a Thorax you probably want to orbit a little further out though around 10k or so maybe.
They are both pretty good ships. The Rupture is pretty good training for later flying a Hurricane. The Stabber is pretty good training for later flying the Vagabond.
I basically fly both and both are pretty good. Rupture is more of a bruiser / brawler while the Stabber is more finesse.
