Before I quit around eight or ten months ago, I made a pretty penny supplying various PvP oriented consumables to 0.0 NPC stations with high volumes of nearby conflict. However, looking at the changes over the last half a year, and the times thats passed.. is this still a viable profession for someone who isn't flying a cap ship? Or have increasing numbers of carrier capable pilots, and jump freighters, actually resulted in steady supplies of consumables to non-outpost 0.0?

It's an intensely risky proposition, even with a scout, if you plan to do it with a hauler. A solo cloaked dictor pilot with a cloaked alt in the preceding system can let your scout go through and bbq your hauler.
Other than that, t2 imports are quite profitable, easily worth hundreds of mil / week for a couple hrs of effort.

I have no 0-space experience and have a simple question. Where would you sell the goods ? I know about Outposts and POSs but I don't believe you can sell from them. Are there some NPC stations around that aren't constantly camped ?

T1 and namned equipment can also be very profitable in 0.0. Just make sure u don't haul equipment that drops from the local rats
To the one above me, some regions have npc stations (Like Syndicate, Fountain). Others like the drone regions don't.

I for one would be most obliged if you imported T2 lasers and armor tanking eq and so forth to Delve along with faction ammo
