I've read on a few accounts that it is worth training these skills up a few levels so u get a higher chance of invention (even though nothing of the sort is listed in the skill info itself)
So is this true? would it be better training the encryption skills up and does it really improve ur successrate?

Yes all the skills listed in the blueprint's invention tab will effect the success change.
Encryption skill + 2x Science fields

So if this is true, why isn't any of this listed in any official info? The skill itself says nothing about increased chance of invention at higher levels.

It does effect it.
Its just CCP never has done a good job with item/skill descriptions. Like Jameroz said any skills listed on the invention job bpc are better to be skilled up.. at least to lev 4... 5 if you got lots of spare time.

one thing i always wondered about: will the "Hacking" skill affect the invention process also, or is it ok to train that to level 2?

hacking has no effect on invention - just for hacking cosmos | exploration cans
