Usually level 1; Frigates and Destroyers Level 2; Cruisers and Battle Cruisers Level 3; Battle Cruisers and Battle Ships Level 4; Battle Ships and bring a friend or 2 Level 5; at least a Battle ship and bring lots of friends.
Hope this helps.

Typical path to follow
Lvl 1: frigate Lvl 2: cruiser Lvl 3: battlecruiser Lvl 4: battleship Lvl 5: friends
For lvl 1's, race through em in a frig - missiles are very handy here, as you can often hit things just after you target them, and in most cases kill them shortly after targeting as well . Lvl 1's are also often done in a destroyer (lots of guns, same size tank), however, it is highly recommended that you only train up destroyers so you can have an easy loot ship.
Level 2's can be done in a frigate or a destroyer, but they're usually done in cruisers. Again, missiles are very nice here, and fast cruisers are a definate plus as well - if you have the skills and want to pimp, you can also take an assault frig into these.
Lvl 3's are usually done in battlecruisers, or sometimes battleships. Here is where missions start to get rather more difficult, and you have to start using (if your using a gunship) some tactics like moving to lower transversal and getting range. Some people do them for fun in assault frigs, but more often they'd use a heavy assault cruiser if they're looking for pimp.
Lvl 4's are usually done in battleships, and can be rather difficult for beginners. The usual way to run them is when you're first starting out get a ridiculous tank, and as you get better you start reducing tank for more gank. They can also be done by some battlecruisers, most of the HAC's, and command ships. People looking for pimp usually get a faction battleship.
Lvl 5's are generally not done - they don't give enough reward (when compared to lvl 4's, when they're split amongst all the gang members), they're in low sec, they cant be done solo (yes, there are some exceptions, but they are most definately the exception, not the rule). Of course, some people do try to run them in capital ships, but from what I understand these people often loose captial ships - mostly to the pirates who go "oooh shiny".

Alternative viewpoint:
L1: drake L2: drake L3: drake L4: drake L5: drake + friends
Also note that t2 versions of ships can be used for missions suited for 1 hull class up: L2 (and some L3, really) in an assault frigate, L3 and some L4 in a HAC, L4 in a command ship.

Actually u can use any ship u want for any mission that does not have parameters to clear the acceleration gates. Thus, I have used a bc on a number of lvl 1 & 2's but where the gate won't let that ship past the gate, I then switch to a destroyer--every gate that I have seen that purportedly limits the gate to only Frigates will still allow a Destroyer to pass thru.... Why the overkill u ask? I have been doing kill missions with a new corp to get quick higher standing so that I can use their higher lvl R&D agents. With R&D agents u need both a certain faction as well as corp standing in order to use them--so I can have a high faction standing but if I have a low corp standing have to get that up first and so the need to do the rinky dink lower lvl missions as one has no higher lvl agents until u gain further corp standing--lol

Overkilling on missions does start to get boring after a while, but it does help to get to the better level missions faster.
Personally I love using drone boats for this as you can switch your weapons to match the level of mission your doing very easily. Light for level 1's, Meduims for level 2-3. Maybe have a few heavies to pound the BC's in level 3's.
