Mebbe a silly question for some but i think it is quite important.
If u anchor a pos at a moon (not onlined it just anchored) and set a password, can someone else come along and unanchor it and steal it? Same with the structures, can u anchor them without putting them online and if so, can someone (not in corp) come along and take them away?
In hi sec, if someone shoots my anchored but not onlined pos, will they get concorded? that is if there not at war with corp (i think the answer is yes but i like to be sure)

the PW is for the shield to function
the pos is tied to your corp , noone can unanchor it
if the pos is not online they can and will suicide your structures, mobile labs with their low HP are famous for that
yes concord will protect your offlined pos (i think)

1 other thing i forgot to ask, when u anchor a pos it takes a certain amout of time, does one need to be present when the anchoring begins? or can u eject, start to anchor then fly of to maybe get other parts or something? or do u need to stay at the pos untill it finishes anchoring?

You can even log off, or have it anchor over DT.

You can leave and log off yes, but why would you?
even if you are a little ship, it is better to have some defense than no defense. |

so, let me get this right... in hi-sec you can start anchoring a pos and leave it? what if your anchoring it and a indy shows up and scoops before its anchored?
(if that's possible)
I'd say best way would have the guy in indy anchor it and wait till its done. online it, then put the rest down.

In low sec, staying near your POS is the better way to say "Scan me and come, there is something to see here !!"

Its not possible AFAIK. + what would you do in your indy to prevent him from doing it even if it was?
Unless you were hollering in Jita the exact location and time you were planning to anchor your POS, the chances of another person showing up in an indy at a random moon are astronomical. Even if you get scanned out at the gate and they see you carrying a control tower it is easier to simply suicide your indy with a few kestrels than go thru all the hoops tracking you down.

there is no option tu unanchor it , the only time you can scoop is the little window from jetison to the anchor here ...
if you wardecced you can shoot it down or try to =)
but then .. an indy or a small ship will not help you either

Oh, another question 
Still learning here.
If i made a 1 man holding corp so i could put up a pos, what would happen to it if i joined another corp? do i have to take it down? And if i'm in another corp, can a corp member (who is not a director) have his own personal pos?

If your alt corp goes poof, so does your access to all of its assets. There was a guy here a few weeks complaining about just that. He accidentally disbanded his corp and lost access to 500mil worth of stuff.
So... If you do make a one man alt holding corp, make sure you stick another alt in there just in case
As for your other question: POS is a corp asset and as such not transferrable to other corps. If you director leaves he does not take POS with him. If you would like to move a POS to a new corp you have to unanchor and redeploy it under the new corp.
