I can lock onto more than one target at a time, but my weapons only fire at the first one. Is it possible to fire at locked targets in parallel or do I have to hack through targets in series?
Also, my weapons always stop after a target is blown up even though I have others locked. Is that normal, or is there a way to get them to switch over automatically to the next target?

Of course. If you have multiple targets, you choose which modules to activate on each target. So if you have say 4 guns. Target 2 enemies. Just activate guns 1 and 2 on the first target. Click the other target you've locked and fire the next 2 guns.
You will not automatically start firing on your next target, you have to do that manually. This makes perfect sense when you figure that all of your targets may not be enemies. You could have a friend targeted because you using a remote sensor booster or similar module. You wouldn't want to automatically start shooting at your friends....well usually.

Just because you can shoot more than one target at a time tho, doesnt mean you allways should. Because by doing you you dont reduce the damage done to you very quickly. Most people will focus all their firepower onto one enemy at a time and only actually start shooting another target after it goes pop.
There are exceptions to this like when using ecm etc or maybe when shooting at npc frigs and they die to fast to worry about.
Its still worth targetting multiple ships tho as its a pain waiting for a new target acquisition when the first one dies.

You will also have targets at varying ranges. Some will be outside optimal range, while you attack those in range. So always take a peak at the distance before you open up on them, so ammo isn't wasted.  I speak from experience.

And don't forget the Targeting skill which increases the amount of targets you can have locked on.
