Don't forget to pay the 'owners' though, they get upset when you mine their moons without due consideration .

Only 1 harvester can work a particular resource though. Even if the resource is listed twice, only 1 harvester can work that resource.
Example moon: Platinum Tungsten Platinum Atmospheric Gas
In this example, a total of 3 harvesters could work the moon. 1 for Plat, 1 for Tungsten, and 1 for Gas. Even though Plat is listed twice, only 1 harvester could gather Plat from that moon.
Also, 1 POS per moon. No exceptions. _______________________________

My thanks for your answers. It gives me greater understanding of the situation both in terms of mechanisms and some maneuvering that I hadn't fully understood previously. Helen's answer even gave me some info I didn't know enough to ask about. Thank you.

Regarding 'owners', if you are moon mining you are in low sec, the strongest local corps in most area's will charge you a fee for the use of the moons, protection money if you will. At least thats what happens where i opperate.

That's what I thought you meant. I don't see any percentage in paying anyone "protection money". It's too much like paying a ransom to a rat. Something I never do.
I'd be far more inclined to arrange a mutual defense agreement with one or more corps so that when "owners" come for the "rent", we'd stand together to give them payment in weapons fire. Alternately, if the so called owners of the system were offering to come to the defense of my facility against invaders......that would be a different matter and agreeable. Much the same as hiring a merc outfit to assist.
If you go into low sec, you go prepared to defend yourself or you go foolishly. In other words if your corp isn't strong enough to withstand some rats with delusions of grandeur, then you should not be doing that moon mining. There are other ways to earn isk until such a time as you can hold your own.

^^ agree, our arrangment was one of mutual benifit. We did pay out a (nominal) fee for usage of the moon and provided intel on any hostiles, while our PoS'es were protected and if we needed it gate-camp breaking was provided.
