Yo. Right now I'm using a navitas with an iteron II, I make roughly a mil every hour or so, I've only been properly mining for a few hours yesterday, as it took me ages for all the skills. But anyway, I DO want to eventually branch out of mining into maybe some mission orientated, or even to just defend myself in low sec. so, I'm thinking what should my NEXT ship be? I've checked out the mining guide, but I'd like some other opinions. Cheers.

A properly fitted Battleship will outmine a Retriever, but it won't get you anywhere nearer a Hulk. It'll also be more useful for mining in lower security belts as it'll be better equipped to take care of NPC spawns. You do, however, need to get your fitting skills up to scratch, as the only reason a BS can outmine the dedicated mining ships is because it has enough CPU to fit mining laser upgrades.
It's up to you, really - if you plan on doing anything other than dedicated mining, then the cruiser/BS route is probably better. Focussing on barges and exhumers will pretty much leave you incapable of flying anything else, as you'll be skipping the usual cruiser/BS/etc skill ladder. But if you're serious about mining, then there's no two ways about it - your aim should be to get into a Retriever and then a Hulk as quickly as you can reasonably manage.

A reasonably fitted Covetor (Barge) can mine around 1.25K m3 of ore per minute. With current Tritanium prices that equates to about 6M per hour just on Veldspar.
If you're in mining to make isk, barges is the only way to go. Exhuimers are the next step up from that but can't be fully insured like a Barge, so you stand to lose millions of isk to suicide attacks if you're not tanking it. A tanked Hulk isn't much better than a well fitted covetor at ore/minute so it's your call at that stage. -- The views or opinions I express are solely my own and do not reflect those of my Corporation or Alliance.. If he's not going to bother with battleships, he may as well skip mining cruisers and go straight for barges... time spent levelling Frigate/Cruiser is time not spent skilling towards a Retriever :)

Might as well be working on training up to a Retriever or beyond, if you're looking at a future in mining. The Navitas, assuming you can haul the ore somehow, should hold you over at least until then.
My recollection was that you could actually mine more than the base cargohold of the Navitas, if it was set up well enough, but I don't really remember anymore.

I'm kind of surprised no one has mentioned this yet, but train up some drone skills along the way. If you're flying barges or exhumers, you'll want drones 5, and race-specific drone specialization so you can use t2 small and medium drones to defend yourself. If you're considering mining in low sec in a barge, having good drone skills will go a long way towards keeping your ship alive. The faster the rats die the safer your 100+ mil hulk is. Plus, you can always use mining drones as well to up your yield per cycle.
Personally I wouldn't even bother training for barges before getting at LEAST drones 5 first.

Training cruisers also opens up your options later on, should you decide to run missions. At the very least, getting into a mining cruiser like the Osprey with minimal training means you have a platform from which to train up your Drone skills. The Osprey can carry four light drones, which is excellent for defending yourself from rats in 0.5 belts. You can fit an extra mining laser to the cruiser too, for an immediate 50% boost in ore extraction rate.
Sit tight in the mining cruiser while levelling up your Astrogeology, Drones, Industrial, Refining Efficiency and assorted other skills - right up until you're ready to board your Hulk.
In the meantime, you have the option of flying a combat cruiser for level 1-3 missions, just to change the pace every now and then.
Just my advice, for what it's worth.

Agree on training cruisers just to be mission worthy. Mission mining is also a good way of getting access to asteroids when the nearby fields have already been depleted (say, sunday afternoon or wednesday).
I wouldn't train battleships just for their mining capabilities. CCP has stated that they did not intend a BS to outmine dedicated mining ships, and general discussions is already chock full of people foolish enough to spend a lot of time training for skills with just a single use or a single ship in mind. Nerf proof training means flexible training.

FWIW:
I started out specialized as a Gallente miner. I used a Navitas for 2 weeks until I trained for a cruiser, then mined in a Vexor for 2 weeks until I had enough isk to outfit my ship, and then started missions. 2 months later I am in a (mostly) T2 fitted Dominix doing level 4 missions and have 3.6 mill SP and 500 million isk. I probably will never mine again unless it's in a corp op.
Salvaging makes more isk for a newb than mining does, and missions are more fun.
