This is going to sound like an extreme noob question, but I'm new to this game. Is there a way to target multiple pirates, etc. at once? Also, what is a good combat strategy to avoid getting hit by them? Thanks.

The electronics skill called Targeting allows you to lock one more target per level up to the max amount of locked targets thats allowed for your ship. You may have level 5 targeting but be restricted to locking 3 targets if thats all your ship allows.
You can avoid getting hit by flying a speed fitted ship, but because you said your new its proberbly not a viable option. You are going to take damage so you need to tank your ship using armor/shield hardeners to reduce the damage you take and use an armor repairer/shield booster to repair the damage.

Thanks for the reply. Any advice on outfitting a Rifter? I managed to buy one and need to put guns, shields, etc. but I'm not sure what would be best. Right now, I'm using it for level I missions. The NPC's seem to be able to shoot me from a long distance and I can't hit them that far away. I end up taking a lot of damage and have to warp away before they destroy my ship.

Highs: 3x 125mm Autocannons (or higher caliber if they fit) 1x Rocket Launcher Mids: 1x 1mn Afterburner 1x Statis Webifier 1x Cap Recharger Lows: 1x Small Armour Repairer 2x Specific Resistance plating for the damage type that the npc's you are fighting do.
Longer range setup would be something like
Highs: 3x 250mm Artillery Cannon's 1x Standard Missile Launcher Mids: 2x Cap Recharger 1x Statis Webifier Lows: 1x Small Armour Repairer 1-2x Specific Resistance Plating for the damage type that the npc's you are fighting do. 0-1x Micro Auxilary Power Core (if you can't fit this it is probably because of powergrid, so this will help)

To explain the fittings above a little:
First off, each weapon type (as a Minmatar for a Rifter you'll be using projectile weapons) has short range weapons (autocannons) or long range weapons (artillery). Same skill required for both, you just have the option of using one or the other type. Note that you should be using ammo that complements the gun: use shorter range ammo if you go with the autocannons, and longer range ammo with the artillery.
For the defense, you can use the armor-based defenses as suggested; this lets you use the mid slots for useful stuff.
You need the Afterburner for short range so you can get in range fast and start shooting, and you need the Webifier to keep your targets from flying away from you.
For the long-range setup, you can hit them where they are, no need to rush in, so the extra Cap Recharger is to give you enough juice to support your armor repairer for longer, and the webifier is just in case anyone gets so close that your more ponderous weaponry can't track well enough. The Micro Auxiliary Power Core has high skill requirements, but might be needed or else you won't have enough power grid to fit all those weapons and defenses.
As far as the fighting, you warp in or try to approach to the best range for your guns and missiles, and then open up on each target while also repairing damage and trying to orbit as best you can to minimize how well they can hit you.

After Targeting 5 the next sb is multitasking and with that u can target everything that the larger ships allow--8 targets etc..
