Heyo,
Well after my 14 day trial ended, I was well into addiction. My main guy is gunna be the "Combat" guy. I love tanking stuff for my buddies and watching the fun. We need a salvager now. And a cargo runner. So I made a second account. Naturally that brings my newbie self back for some more questions.
1. What race is better suited for freight runs? 2. What starting profession kit gets me into it the quickest based on starting skills? Guess that would be a bit race dependant as well 3. Is there a market for hauling other players cargo around space? If so, is it a good market?

1) Doesn't matter, they can all crosstrain. IIRC, the Caldari freighter has slightly more capacity than the others; however if you're limiting yourself to industrials then the Iteron V is hands-down the best; and if you're sticking to midrange industrials which don't require a month's training then the Mammoth is the best and only takes about a week to train for. In any event, your starting skills will make almost no difference whatsoever, so pick whichever race you prefer to look at.
2) If you're after actual freighters (as opposed to just industrials) it doesn't really matter, as the prerequisites are quite hefty (Spaceship Command V plus Racial Industrial V) so you'll need a lot of training anyway. Freighters have no fitting slots anyway, so really just pick whatever you like the look of most; if you want to stick with regular industrials, almost none of the skills come as starters so pick whatever will get you the tanking/upgrade modules you want fastest.
Best bet: get EveHQ, and play with the character goalseek utility; pick what skills you'll be needing and see what build will get you there fastest. For example, a Caldari Engineer will start with the necessary skills to fit a T2 shield tank, and can train for a Mammoth in about a week.
3) Sort of, and not really. People put up lots of contracts because they're too lazy to move crap around themselves, but it's not something that's really worth building a career around - just pick them up if you have som free space and happen to be going in that direction.

IMHO the Gallente destroyer is the best for salvaging/looting - 700m3 cargo space with some decent expanders.
And the Gallente T1 tier 5 hauler (the Iteron V) is the best T1 hauler around.
I've got both a Gallente and a Caldari character trained up for these....it's really not that hard to cross train.
With the skill Gallente Frigate III you can train both Destroyers and Gallente Industrial to fly these ships.
I would suggest moving to T2 haulers sometime soon though as the T1s are paper thin.

Unless you're making regular runs through lowsec or 0.0, don't train for a t2 hauler. There is simply no point unless lowsec/0.0 are in your immediate future. If you think they'll protect you from a suicide gank on your way through jita...they won't. No Offence, but this is completely wrong. My Blockade Runner has got me out of a tight spot a number of times in high sec. All you need to do is get away and survive long enough for Concord to arrive. The inbuilt WCS in a blockade runner means that they need to get 3 points on you before you align and warp (more if you've added your own WCS). These things align rather quick as well.
I've been targeted and I assume had points put on me a number of times. Certainly my CovOps scout alt has witnessed a few people being popped by Concord in the 10 seconds after my blockade runner has warped out.
I'm not even going to try to count the number of times that I would have been dead had the gate camp not bothered to target because they saw a blockade runner, when they would have tried it on for a loaded up T1 hauler.

There is somewhat of a market for hauling stuff for other people; it's done via the courier contract system. However, a lot of the contracts can be scams, trying to trick you out of your money, and the few profitable ones get picked up and finished pretty quickly. So, all in all, it's not getting a freighter just to haul for others. Get one if you or your corp need it.
All races can haul, and most people train the Industrial (T1 hauler) of their race in the process of training for other ships, cause it's nice to be able to haul 10-20k m3 now and then. The freighters, of course, are for heavy hauling, and the transports are for somewhat safer hauling of expensive things.

Kudos to you for not dying yet, but trust me, I've seen it happen a number of times 
For my money, I'd train electronics 5, and cloaking 1. I've never ever used blockade runners and I, unfortunately, have had to haul lots of stuff past suicide squads. Haven't lost a ship yet, but if I do, the loss of a T1 hauler + a prototype cloak including cargo is a sight better than the loss of a T2 hauler including cargo. ---
