Why Jita is the most prominent trading center in all the universe?

Yulai used to be "Jita" as CCP designed the map in such a way that all roads lead to Yulai (it was literally in the middle of all the empire spaces).
CCP saw this as a terrible thing (the lag was awful), and changed the map to make people spread out more (sound familiar?)
Jita was already an important trade hub, and so network effect means everyone just ran there together. After that, CCP focused on fixing the lag in the main system (the above link is a good history), rather than try it again.
Because Jita wasn't quite the crossroads that Yulai was, there was extra gravitas towards regional sub-hubs, and so Dodixie / Rens / etc sprang up in popularity, and it's say in a similar way ever since.
The lag issue has largely been solved in Jita these days, and it seems to sit at 1500 without much issue. |

Reason why Yulai was the trade hub was due to superhighways that EvE used to have. The moment those were axed, Yulai didn't have much going for it.
