The store has some great stuff, I already plan on getting the Caldari mousepad and the map book, but here are some things I'd like to see in the eve store.
Eve Messenger Bag - Dark Grey with a Merlin on the side.
A shirt that says "Have you seen my Internet Spaceships?" with a cutsie cartoony style picture of smiling spaceships. comes in colors to match the race, Caldari, dark grey, with a picture of a merlin and drake. Amarr, light yellowish greyish, with a picture of an Armageddon and an Omen. Minmatar, dull red, with a picture of Thrasher and a tempest. Gallente, dull green, with a picture of a Dominix and an Ishtar.
eve ship models, preferably die cast, I'd talk to hasbro, they do a nice job with those.
Monopoly- Eve Edition (Jita is boardwalk)
Eve Dogtags
Eve diner plates (yes I am that nerdy)
Eve faction stickers
a huge wall map 2 by 2 meters, of the Eve universe, with all the systems named and the regions color coded.

A variation on the popular Monopoly format could work. I think a direct Eve-version of wouldn't work. Monopoly, although cuthroat, isn't quite cuthroat enough I feel.
The models, they were planning on doing some a long while back, the the process was too expensive to warrant without really knowing if x amount of a Brutix would sell. There are some prototypes kicking around IIRC. Best bet is for you to pay a nice man to make you one from matchsticks, another nice man who can make you one from paper, or download the lovely DIY meshes by Smiffa.
Dinner plates... a tad extreme, but I already have a mug, so what the hey.
Pirate faction dogtags could be fun  , as could stickers.
As for the big ol' wall-map. I say do it!
An idea I had a while back was for plushy eve-ships

I would want models of my favourite ships on a stand to sit on the shelf above my computer. :D
Oh crap I just saw something in the last post, said it was an idea a while back and was cancelled due to costs. :(

I'd kinda like to see integration of the timecard system (GTCs) with the store... have a few extra iskies I'd like to part with for getting some EVE mugs 
Wonder if CCP has thought of this yet??...  |

Why settle with a huge wall map?? Give us EVE Online wall tapestries!!!
