I'd like some input on which ship you think is the best for hauling a lot of cargo around. Also say what skill it needs and whether it can protect itself.

I personally favour the bestower. Firstly because of the ease of getting one. The skills dont take long, you get value for money and quite a large cargo space. If yr looking for some hardcore hauling go for the Iteron V, but that takes a long time (lvl5 takes around 30days).

For a lot of cargo, mammoth (minmatar industrial IV). Iteron V is better but takes a lot longer to train. Mammoth has 5 mid slots and 4 low slots so if you need to defend from npc's you'll be able to equip some basic defenses (indies are pretty fragile, so I recommend setting up for running rather than tanking). When hauling, the best protection is having a frigate scout ahead of you and being ready to flee (bookmarks help here).
For smaller cargo for protecting yourself, you're either going to use a combination of speed and/or tech (forget about engaging anyone). If you use speed, go with a cargo frigate like the kestrel or probe. If you're going to use some tech, cruisers like the vexor with 2 mwd's can be fairly fast and equip some defenses against being warpscrambled, etc.
Another option is to use a battleship, since you can get their cargo up quite a bit with multiple expanders, but they're very expensive so I don't really recommend using them that way.

Not a hard question, Iteron MarkV is the best.
Can fit a MWD (with Eng4 and 5 RCU) and top 900m/s Can fit 5 cargo expanders and hold an entire cargo can worth of mineral/ore/goods
40days to train.
Not many people have the patience to train this skill. Especially if they only have one account.
As far as defense. All indy's suck at defense so it doesn't really matter.

Iteron mk5 can fit a pretty nasty defense. Two 10mn ABs, EM ward, thermal ward, and small c5-L or tech 2 shield booster. I tanked a scorpion assaulting me for a good 20 seconds or so while I was trying to enter warp - the mk5 is a tough nut to *****.
