So...I'm finding out (the hard way) that it would be useful to set my "keep at distance" default to something really high, like 50KM or more. Thus, I could have a 'run away' button. Alas, the "set default" option for "keep at distance" only goes as high as 1000m or so. Did I mess up my settings? Can I set the keep at distance to a much higher number somehow?

Maybe Im mistaken but the best "run away" button is to have a bookmark and warp to it.
Keep at distance goes higher than 1,000 maybe its capped at 99,999 dont really know but I have some set up for 1,600 or more.

You can do it, but they don't make it easy. 
If you go to the Selected Object window (usually right above your overview -- it's the small window with lots of buttons that appear when you select an object in space), you'll see that one of the buttons is Keep At. If you right-click on that button, it'll give you the option to type in your own default distance.
You can do the same thing for default orbit and warp-in distances, too.

Something to watch out for when ratting or mission running. If you select 'keep at distance' to your target, your ship stops!, once the target has been destroyed. This does not happen when orbiting a target, as your ship keeps its velocity after the target is destroyed.
If you set your orbit to high number, you would effectively fly away and is useful for getting the optimum direction for kiting etc. and your ship keeps moving!

If you're kiting enemies, the best method I've found is to align to a distant object (asteroid belt, moon, whatver) and just vary your speed to let enemies catch up with/fall away from you. That way, it doesn't matter which way enemies are coming at you - and as mentioned above, keeping at range will bring you to a dead stop when the targetted enemy dies. Plus, if you really get in trouble, you can warp away almost instantly if you're already aligned to something.

"Keep at distance" works great as a "run away" button. One of the golden rules of the mysterious EVE interface is "When in doubt, right-click." Chant this mantra ten times and then I'm sure you'll be able to set the default distance, no problem.

No, unfortunately sniping positions or cloaked observation posts have to be set manually by BM, yes it would be great for bubble avoidance, however if they were to go to 150KM+ on the warp in at I'm sure CCP wold change the bubble mechanics as well.
Remember, greffing is encouraged because this that kind of game, if you don't like it find a way around it.

100,000m (100km) actually. That's the top cap.

I think he's referring to the options you get on the Right click -> keep at range menu (200m, 500m, 1000m and 'current', off the top of my head). And also, I think if you're setting the distance by hand the maximum is actually 999km; not that anything over 250km is likely to make much difference.
