I saw many posts about inertia stabs, overdrives and nanofibers, but some of those things have been recently changed, so I do not really know as newb what to use.
The purpose of my ship is to run lvl2 courier missions. 80% of the time in empire and 20% or less in low sec, no 0.0. 300 m¦ is sufficient since there are no larger goods for missions in the database.
My guess is that the Probe is the best ship, since it has a high inertia mod (3.1), low mass (1.3m) and enough cargo. Which mods would be the best for the low slots? My guess is one Nano II and one Inertia stab II, but which combination would you suggest(faster align/get into warp)?
Is there something usefull(= faster to warp) for mid/high slot?
I do NOT want to use inty, cov ops, blockade runner or rigs. They are to expensive(skills) for some lvl2 mission running.

Edit: The "Local hull conversion inertia stab I" seems to be better than "Inertia stab II".

Inertia mods are stack-nerfed together, mass mods and rigs are stacked-nerfed together, but mass and inertia stuff is stack-nerfed separately from eachother. For align speed, a -x% mass mod does the same as a -x% inertia mod.
So, the answer to your question is 2 istabs.
Only if you have to add a third low should you consider a nanofiber, if your only concern is align time and you don't wish to use any rigs.
EDIT : for cheap rigged setups, you want nanos plus nozzle joint rigs... for most effective rigged setups, you want istabs and polycarbon rigs.

Probe, 2 I-stabs is probably the best fit. I've usually used Kestrels as haulers for small volumes of goods, but that's because I'm most familiar with the Caldari frigate lineup.
However, better than running camps is avoiding them in the first place. You can use the map to get some basic intel on pilots and deaths in the systems you'll be going through (though it won't help with fresh camps). One more related thing that came to my mind: If the mass of the ship is reduced, is than less capacitor energy needed to warp the same distance?

If they haven't changed the warp distance/mass/capacitor function, then yes, reducing the ship's mass will lower the energy consumption for the same distance travelled.
