Are clever or entertaining responses from pilots in a no win situation ever rewarded by you? Or do you have the empathy of Caligula and pod them regardless?

If I'm in a war, or under contract then certainly not.
If I'm pirating or engaging in some surprise pvp, then if they avoid smacking and make me laugh with some witty comment, I'll sometimes let them live. Truth be told, in the past I've recruited pilots for doing just that.

I have not been begged for mercy often (in 0.0 people generally expect to die), but yeah, I've let the occasional guy who's camped into a station out for a bit of ransom.
People in space who are held down are never shown mercy. They die.

A corp mate in an old corp I was in let a rifter go after making him dance for him. The rifter just jiggled back and forth for a minute and was alowed to go
Also, my alts pod was alowed to go free from a 0.0 bubble camp because the bio I had at the time made the fc chuckle.

It made me feel really bad but ... Guess what i said .....

I've podded people in high sec before (suicide podding!) for no reason other than I was there and they were there and I was bored :D
No. Never.
Except this one time, a guy came into our camp like 30 times in a night, in an ibis over and over and over.
Eventually I just double webbed and scrambled his pod just to stop him annoying us.
Then I killed him after about 30 mins. --

I never seem to catch any targets that want to smack or even talk in local... I'd be willing to show mercy if they made me laugh enough or if they offered me a sensible ransom. However, usually in "normal" PvP (non-small gang / solo pirating) the DPS on the targets is far to high to allow for much communication before they pop. Thats basically the "bring your friends" thing...
I did get hate mail a few times though and even once a real newbie asking me why I killed him. In that case I actually showed him mercy and gave him a few mil ISK and a few tips about lowsec so he could buy (and maybe even keep) a new ship.
So short answer: yes, I would show mercy under certain circumstances.

Mercy? Nope, not really as far as i can remember.
Ransoming? Yeah. But that has nothing to do with mercy. It's 100% business.

This noob in a velator came into our camp over and over again one night a few years back.
We thought it was highly amusing so after a while we didn't kill him and invited him to join us.
He did and we allowed him to get the final blow on a hauler we held down for him with a civie blaster.
Was rather amusing at the time.

Every once in a while if I kill someone in a cheap frigate and they're nice in chat about it I'll refund their ship. Generally speaking though I'll almost always tell them what they did wrong and how to avoid doing it again in the future. If they're not jerks about it in chat that is. _______________

I'm more likely to be on the receiving end and after some bad experience, I tend not to pay ransoms and just let them blow my ship up so I can go home and buy a new one, no need to lose more than necessary.

I gave a guy his loot back after I killed him. He was only a few months old and surprised me that he was in a Drake.
I killed his Drake with my Ishkur and ended up talking to him. I felt bad because he was new and wasn't looking to pvp but he was such a damn fine sport about it, I gave him his loot back and had a nice chat with him.
I don't know if he's new to the game or not, but his character was only 3 months old and showed a tremendous amount of sportsmanship in taking a fairly large loss for a newer guy.
I said, "Hey man, sorry I killed ya but war is war." He responded with, "No problem bro, it's part of the game :)" Needless to say, I rarely see that kind of response. Quite refreshing.
I have retracted wars against corps before because I felt bad for them. One time a few newbs thought it would be nice to steal loot from a kill of mine and I dec'd them. It turned out there corp had tons of players under a month old. I podded one guy twice who forgot to insure his clone and he lost a few days of training. I dropped the dec and sent him a few million to cover his losses since he really had nothing to do with the people who started the war.
Though, I will be decing the people who stole from me now that they are older.

That's not mercy, that's just prolonging the punishment.

Id say it depends on the situation.
Of course, if im in a gang ill follow orders and pop/pod whom im ordered. Thats neccessary for gang cohesion and proper tactics.
However, im im solo im always willing to listen. We were all newbies once, and i myself got my start a few years back on an indy character who, when i was popped one to many times running gatecamps, i just gave in became a pirate myself. 2 years later ive never looked back.
From time to time though ill let a pod scoot away if i feel bad for whatever reason (popping a kessie that had notrhing but a handful of T1 learning and basic skills in it...kinda lets me know what kind of character he was).
However, no matter how the fight goes, the most important thing for me is that people dont smack and conduct themselves well. I dont mind sly comments or slight sarcasm, thats part of the fun. But when someone calls me a ***** or saying i have a small ***** as being the reason I fly a HIC there going to get the pod express every time.

That you were sorry about the sec hit you took? :D
A few times people have begged me to stop or let them go or whatever and tbh its kinda pitiful, makes me wanna pop the ship more because they really need to see a loss isnt the end of the world.
As for people being good sport...noez I dont think I'd let them go but I'd often stay and chat awhile giving them plenty of advice on how to avoid being gankified again which is worth more than a single ship -----------------
