Is there a way for someone to say scam you out of a large amount of ISK usuing contracts?
For example.
I am looking at a Raven Navy Issue, so I viewed all of the auctions/item exchanges, and there are a few with [Multiple Items], is there anyway the person who offered up the contract can screw me and basically not give me anything in that contract? I'm just a bit hesitant to spend that amount of mula if theres a chance I won't get anything :)

You need to be sure you read the contract carefully, especially the WTB and WTT. The common "scam" is to offer a Raven, in exchange for a Navy Raven and a pile of isk. If someone that already owned a CNR and wasn't paying attn, they could get screwed royally.
Also, be careful when browsing the contract list rather than searching a specific item. They like to put up a Raven for sale, but describe it as a Navy Raven. Then they put a too low price on and hope someone clicks OK in sheer greed to beat everyone else to the "deal".
Lastly, avoid "free form" contracts like the plague.

The golden rule in contracts is that anything in red you pay and anything in green you receive
So if you are looking at a multiple items contract and the cost is in red and the items are in green then you will receive the items in the green bit of the contract

A lot of BPO offers on contract are actually for BPCs.
The Raven / CNR scam goes like this: according to the text the offer is Raven + x amount in return for a CNR, but looking at the contract it is Raven in return for CNR + x amount. Seen the same for Amarr Navy Apocalypse.

Also, pay attention to the number of digits on your contract.
Example, say an item goes for 300 mil, there will be a bunch of contracts around that amount, along with a number of WTB contracts for 30 or 3 mil.
.00 is not 000 
I know I very nearly made a lot of dumb moves during my first few weeks in Eve due to this.
