It seems you see a fair mix of freighters out there. I can understand picking Gallente since you have to train Indy 5 so they get the Iteron V as an added bonus. Caldari have the largest volume, so picking them would make some sense too if you plan on filling your cargo up every time.
Why do people pick amarr or minmatar? Minmatar have a slightly higher speed but I don't see how this would matter since if you are flying a freighter you are probably using WTZ, and if you use autopilot you don't really care how long it takes. Do they align faster?
The cost of training frigate 3 is almost nothing...less than a day of training, so I don't see how having racial frig 3 already would be a factor.
tl; dr - Why do people train Minmatar or Amarr freighters?

I trained minmatar because I already had the training for mammoth (saved me 4 days) and I don't fill my hold every run. I also liked the minmatar T2 industrials. The Fenrir also aligns slightly faster, but that can be fixed if you have a corp mate web you.

My Brutor hauling alt is old enough to say I had Gallente at lvl 5 before freighters were introduced, so, that was a no brainer. I ended up getting the skills *gifted* to me by former corporation to fly the Charon. As for Providence, I love the shape and will be the next one I buy. As for Fenrir? who knows? why is it even in game?

Actually, the extra speed on the Minmatar freighter can be significant.
Assuming you are using a kitchen timer (or something similar), and actually can benefit from saving the time,....
..... a one hour trip in a Obelisk is probably around 50 minutes in a Minmatar Freighter. Not huge, but it IS significant. Afk hauling time is still time that an account is used for a task, and NOT being used for something else (even if that "something else" is just more afk hauling), and thus still has value.
On a related note, the Obelisk is the over all toughest frieghter (LOTS of structure), and is thus a little bit more resistant to suicide gankage. While such risk is largely a factor of cargo spotted by large gank groups before you dock, it is not completely unheard of in this day and age, and is thus a factor.
Play nice while you butcher each other.

With Minmatar industrial V you get the Prowler & the Mammoth, two of the best transports. The Charon aligns almost as quickly as the Fenrir due to having better agility, so if all you want is a freighter, train for that one.
