Can I put 2 moon harvesting array's in the same pos? Do I put 2 coupling arrays on and 1 silo or do I have to have 2 silo's as well? Thanks

Only one harvester per mineral, no matter what "abundance" is listed. One silo for each moon mineral or each reaction, can't mix two kinds in a single silo.

Coupling arrays are just small silo's and so are never 'necessary'. However if the silo or coupling array connected to the moon harvester is offline at the time that the POS cycles (once an hour) nothing will be harvested for that hour. The main use for coupling arrays is when you're tight on CPU and are doing fancy things with reactions etc.
You can put 2 moon harvesters on a POS, but each has to be mining a different mineral, and so you need another silo etc for each one. Each silo/coupling array also only has one input and one output so harvester > silo > silo is fine but you can't connect two things to the one silo or the silo to two things.

Just to add my 5isks worth.
As I understood it the couplings come in useful whenever the module they feed is taken offline. Say they are feeding a reactor and the reactor is taken offline but it takes you over an hour to change the reaction etc then the coupling then acts as a "buffer" especially if you silo is already nearing full. Therefore you don't have to miss an hours worth of moon mining just because you change something later on in the chain. Don't make me use UPPERCASE! |

It's also worth noting that a coupling array can hold about 3-4 days worth of materials. So rather than coupling array -> silo, use coupling array -> coupling array. Then when you have three harvesters, six coupling arrays, you still have CPU for weapons.

It of course depends on which materials, a full silo will fill up of advanced product in 40-80 hours depending on bonuses, a coupling array is only about 3 hours worth of that.
And yeah coupling arrays stop you losing stuff when the POS 'cycles' however if you know what time that is (it's the same every hour, same time it uses fuel) then you don't lose anything by having something offline at other times.
