I know that in the absence of oxygen, blood will take on a blue color. Following that logic, if someone is injured and bleeds in space, will they bleed blue blood? __________________________

Well, I know they say due to lack of pressure your blood boils instantly in space, not sure if it changes colors...
I would think any boiling would happen before there was time for a color change...

There alredy is blood in the oxygen. I think they mean if you take out the oxygen in the blood.

This was covered more thoroughly in the thread about zombie blood.
If you were breathing oxygen right before the cut it would be red no matter where you bleed out. This would be due to the fact that there is nothing in space that is capable of extracting the oxygen from the hemoglobin short of the hemoglobin structure breakdown. If something worse did not already happen to your body the blood would be red none the less.
Also, blood in the body is rarely "blue". The blue tint of the veins just under the skin cause the vain to look blue along with lower oxygen levels of the blood in the vessels/veins returning blood to the lungs. Blood leaving the lungs, vie the vessels/arteries, will always be bright red. Even if bleeding into zero atmosphere of space. Now if you are completely desaturated of oxygen, suffocated for example, you will bleed bluish blood anywhere.

But they blood cells would explode on a microscopic level as soon as it goes out into space, due to the change in pressure, as would you.
Now if this was on earth, in some chamber with no oxygen - but something else like C02 or whatever, yes. ____________________

There is a thing called VO2 Max. This means there is a maximal amount of oxygen that the cells can uptake and utilize at maximal exertion (this varies from person to person and various levels of fitness). No one can completely deplete their oxygen carrying capacity while breathing in the earths atmosphere, @ 21% O2. No one can absorb all the oxygen taken in from one breath. When one breaths out one is breathing out air with a higher concentration of CO2 but it still contains O2 since the blood is not able to extract all the O2 breathed in with each breath.
Now if one is suffocating then that means they are utilizing more oxygen then is present in the atmosphere. During the suffocating process the blood would turn blue once all oxygen in the atmosphere and in the blood have been depleted.

What is VO2 Max
The tests found in the above link suck. I know from personal experience. I had to do a few of them also had to complete a few of them after fasting for 12 and 24 hours.
Liters/minute is the absolute value of maximal oxygen uptake (example: 6.2 liters). Milliliters (ml) per kilogram (kg) per minute (min) is the relative value (example: 6.2 liters = 6200 ml/75 kg = 82 ml/kg/min). A maximal oxygen uptake of 7.4 liters/minute has been reported in a Finnish cross-country skier, Mieto. Also reported is 94 ml oxygen uptake kg/min for a male Olympic champion; 75 ml/kg/min for a female skier.
