sry guys but really bored at work here and I was wondering what you guys consider to be some of the good and not so good cheeses out there, I myself like a good colby/jack or provalone with sammiches, and probly monteryjack for just slicing and eating
your thoughts?

Aye depends on the usage.
But I'll say my favourite cheese comes from my childhood - It's Evora cheese from Portugal just served on a roll with some butter. It's just so hard to find here in the states.

Brie works well with crackers, smoked salmon and chives.

I tried one a while ago when I was working security on the boats and can't seem to find out what it was. Sounded disgusting but actually, it was really nice. It was a brown color A kind of muddy brown and had caramel mixed in with it. Don't know what it was called but it was absolutely delicious. The boat was from Norway or Sweden so I'd guess it was a local cheese from that area.
Anyone here got any answers? I'd love to get hold of it again.

favorite is a very sharp aged cheddar.
but then i have been living in Switzerland for a year and a half and i havn't had an aged cheddar in all that time. the well aged gruyere is a nice substitute though. the swiss would starve if you removed cheese from their diet. raclette is very, very evil, but not as evil as fondue.
I also really like, mozzarella, cottage cheese, rochefort, stilton, brie, camembert, halumi, feta, and probably a lot more that i can't think off.

1. Feta (maybe with basil and tomato) 2. Provolone 3. 10+ year old sharp cheddar (it hurts to eat, but tastes amazing).

Depends on what I'm doing. Strong Cheddar or Gloucester is a good all purpose choice. Feta goes good in a salad, as does Mozzarella (which also melts up good on pizza or pasta). Cottage cheese goes surprisingly well in a sandwich, since is spreads and smears easily (particularly good in a toasted sandwich, where it sets and starts to taste more cheesy). I use Stilton in cooking a lot (soups, tarts, stuffed anything), but I'm not a big fan of the blue cheeses just to sit down and eat. ------

However, I really love sowe of the american cheeses, monteray jack etc, especially velveta, my grandmother used to make me this awesome cheese sauce for nachos out of velveta. Too bad you can't buy the american cheeses in australia
