There are well over 5000 systems. Just find one on the map that has a low count of ships and scout it out. Non caldari systems may be a good place to start. Once someone gives out a good system, everyone will come out of the woodwork and mine it out.

indeed, check for the online search tool for ore... I lost my old bookmarks or I'd offer it.
It'll let you search regions, sort by security and belts.
Find systems that look good there and start exploring them and see what works for you.

To answer your question three or four hours.
There are plenty of systems with a lot of asteroids just waiting to be harvested. I have a regular route that moves me from less than ten jumps from Jita to 27 or so jumps. All ore is collected, refined, and transported to a few central hubs where it is turned into ships and ammo. I happily do my part for the war effort. I mine 2-3 hours and net 50 million isk per day. Think it's easy? It's not. It takes patience, attention to detail and dedication. It is a lot of fun. Hope I helped you.

there are hundreds upon hundreds of systems in high-sec, even just a few jumps from the trade hubs that are bursting at the seams with ore.
the best way to find a system with a shit-ton of veld in it is to close your browser, hop in a shuttle, frig, ceptor, or pod, and scout out systems. i've NEVER had problems finding whatever high-sec ore i need by the bucketload

Bah mining is for macro's do some missions get some isk's and buy it off the macros who sell it below market price >< easy!!
