...leads (still) and (at the least here on my 1st gen. MacPro) to a very unstable working environment.
Now let me say first that the Mac client in its current incarnation is a shining star compared to the first (two) release(s).
Kudos for that.
But, its very frustrating, to find your OS and (running) software being so frelled up by an emulated game. This is really not normal (for Mac OS X). Yes Mac programs crash or freeze (though rarely), but I haven't experienced or heard of 1 single Mac OS X program, that upon use, makes other programs crash or freeze while trying to start up the program, except for EVE.
Over the last past 2 days I played EVE for a few hours in the morning. The moment I quit EVE, things degraded rapidly: I open up Firefox and clicking the bookmarks tab crashes FF. I think ok, lets do some work into Flash CS, it freezes. I switch to 'Dreamweaver' and it crashes upon opening. I go into Photoshop and I get slammed around the ears with 'not enough RAM' warnings.
The only fix, as we all know, is restart or, re-log into OS X. Which is extremely frustrating if you are working with multiple apps, and have dozens of windows open, everything has to be closed, shut down, before you can go back to, whatever one was doing.
Please, CCP can you fix this?
Oh, another thought I almost forgot, please, please give us the tools to bug hunt for you. the majority here will gladly help you improve EVE.

First of all... lower your cache size... when the EVE client starts swapping, it tends to mess things up on my end as well.

Cider is just inefficient, sadly. The Mac client has definitely improved over time (I was playing it on day one), but it still has a memory leak, in my experience...

This isn't eve's fault per-se, your operating system is allowing eve to consume too much memory (how much ram do you have?) the crashing apps is probably due to a poorly written memory manager in the app or even in mac os.

C'mon CCP guys! Have some respect for Mac Users Community here and give us some real and concrete infos about the future of mac version and the adoption of premium gfx in particular!
I love this game, but you're ridicolously delaying some kind of answer or release date for months! Incredible way of thinking about "consumer satisfaction".

Sad to see so many problems 
I recently purchase a new iMAC (3 weeks ago approx) and apart from the first couple of days I've had no problems apart from a persistence issues in the overview (same as I had with XP but more frequent...). To resolve the issue I close and reopen the overview... I typically have to do it around once per hour.
I resolved my initial problems by getting the machine's O/S fully patched up and altering the eve client to start in windowed mode - switching between full screen and windowed id definitely buggy.
I'm frequently (concurrently) running over long periods of time (4+ hours):
a) Between 1 and 3 copies of Eve over two screens. Norm is two copies - one with my hauler and the other with my mission/pvp char.
b) Vent (Mac Version).
c) A torrent client 
d) Firefox
e) VMWare Fusion based XP client (configured with 256Mb memory) for use of evemon and eft.
f) VLC
...
My iMAC is the top spec one currently with 2GB memory (I am upgrading it today it must be said to 4GB...), 3.06GHz dual core CPU with the 8800 graphics card and 24" Screen (1920x1200). Second screen runs at 1600x1200.
If I have any gripes it's over the KB layout and (albeit probably bad config on my part) being unable to use the F1-8 keys... it currently calls up the OSX calculator/calendar etc.

Do the following:
1. Fire up System Preferences 2. Select Keyboard & Mouse 3. Select the Keyboard tab. 4. Tick the "Use all F1, F2, etc. keys as standard function keys" box.
That's it. You have now reversed the default use of the function keys. If you need to increase/decrease sound, brightness etc then press 'fn' plus the appropriate function key.

I have a macbook pro, with the 256 video card, 2 gb ram and its a duo core intel. Should be about 2 years old?
I run bittorrent, firefox and the Eve client at the same time usually, with Adium for chat also. Very seldom do I have performance issues that include noticeable frame rate issues. However, using Firefox is kind of slow when eve is running, but, thats WHEN eve is running... to be expected.
Noteworthy: I play WoW also, and I noticed that a program called "Quicksilver" that I used to use caused crashes and frequent hangups for both programs (wow + eve), removing this caused me to have much much better performance. I find myself installing too many control panels and extra stuff, for performances sake I go through occasionally and remove stuff like multiple desktop programs, quicksilver and other stuff that I rarely use, but require constant cpu cycles and ram.
Pak Narhoo: Are you running your maintenance scripts regularly? Also be sure you run disk utility and "repair disk permissions" very often.

FYI The above commands are just a placebo, the periodic scripts just cleans up some log files and rebuilds the man database.. Repairing disc permissions does just that.. fixes permissions, it will not improve the running of any app..
