Presuming that the overview files are text, can they be copied from a PC and where the Overview settings are stored on a Mac.

They're not text. Overview settings are stored in a proprietary (I think, atleast) file format with all the other settings. It isn't easy to just copy and paste overview settings.

Yep, it's really easy. Windows Vista:
- Go to "C:\Users\<Your Username>\AppData\Local\CCP\EVE\c_program_files_(x86)_ccp_eve_tranquility/settings"**
Windows XP:
- Go to "C:\Documents and Settings\<Your Username>\Local Settings\Application Data\CCP\EVE\c_program_files_(x86)_ccp_eve_tranquility/settings"**
This path should be fairly close but I don't have my XP VM booted so I can't check it.
- Copy the user*.dat and char*.dat files to the device you are using to transfer them to the Mac
- Once you get to your target Mac, open up the folder "/Users/<Your short username>/Library/Preferences/EVE Online Preferences/p_drive/Local Settings/Application Data/CCP/EVE/c_program_files_(x86)_ccp_eve_tranquility/settings"
- Copy all the *.dat files from the previous step in here. This will blow away any pre-existing settings you already have on the Mac!
It would be nice if things like this were stored server-side (especially given the sad state of the Mac client) but this method works for the time being.
**: All the *.dat files in the folder contain general settings for EVE. The char*.dat files seem to contain data regarding currently open windows, etc. on a per character basis. The user*.dat files seem to contain things like overview settings and appear to be stored on a per-account basis.

That will copy over all the settings, not just overview settings. Which is perfectly fine for most cases, I guess. (maybe I misread the OP when I replied?)
