new to gunnery, got 3 t2 125mm rails on taranis, notice all these draw backs on antimatter charges and others, ie, -50% range, -.25 tracking speed, etc
so whats the best ammo to use with above?

Small rails on interceptor is... well... questionable. You have no decent damage, no decent range, or your tracking is gimped (and your survival depends on going fast, so you will miss unless you're shooting at a rather large target) no matter what you do. Although using blasters is a bit suicidal too, but at least you can get some impressive damage.

rail ranis is the best 1vs1 inty atm..
3x 125mm II, offline mod to take overload heat mwd, 20km point, webb dcu, magstab, overdrive/tracking enhancer
still impressive damage at ok range, 7-10km with AM and 15-20km with lead it will eat long range ceptors in seconds and you can keep close range ones webbed at 7-10km and outdamage them! dont use orbit against ceptors because tracking isnt good enough

With guns, T1 ammos have different ranges so you pick the one that's suitable for the range you're fighting at. (ACs are an exception, however, as their optimal is inconsequential)
T2 ammo goes to greater extermes in damage and range than T1 ammo but comes with some fairly nasty side effects.
A rail ranis doesn't do bad damage and can work, but the blasteranis is in many ways the epithome of a blaster boat.

interesting points, thanks again
only reason i thought to switching to rails, was to keep out of web range, but as mentioned, orbiting at 5k per/sec, wouldn't hit anything anyway

he's right.
a decent pilot will get the blasteranis pilot webbed at 7-10km ... and then the fight will almost be over, since the speeddifference between a railranis and a blasteranis is too small to matter in such a fight.
and almost any other ceptor (excluding taranis and crusader) will be outdamaged. ___________________

Assuming the rail-Taranis doesn't get the Sader webbed and the fight just happens at 15-17km (CN Iridium, Scorch) - Taranis will do similar damage to the standard locus-rigged Pulse-sader at those ranges, while having more effective HP due to the damage control. If Taranis fits damage rigs as well (Sader is range ones after all) it's no contest tbh.

72 DPS (1 MFS) is far less than the 107 put out by the sader with no HS. The ranis might have a small advantage with the DCU, but believe you-me, the sader will be faster, especially with the aforementioned damage rigs, and the sader with much better tracking.

Your forgetting 2 hobgob II's. 163 dps at all lvl5 at 6km with 6km falloff (drone any range) and a better tank. Of course real men use blasters.

my two cents tho... the ranis is a blaster ship... yes it can use rails.. but cumoooon guys... blasters on the ranis is sssssooooo much sexier... 217 dps from my normal blasteranis :P

Yep, blasteranis has something...
Allthough, I'm little confused at to the tactics. I've been taught that when you get webbed = dead ceptor, but with a blasterranis...you HAVE to get into webrange. Does it orbit so fast/close even when webbed, that nothing medium will hit you.

taranis with 125mm t2 /w faction AM, one magstab and two drones is at more than 140DPS according to EFT. 6,5km optimal + 6km falloff. also has a DC and decent speed. and unlike the sader it has a full tackle.
for prearranged 1v1 the sader *can* be evil, but so can the taranis (dualweb neutronranis anyone?)
in a ceptor-1v1 speedadvantage is only useful when you can pack a web (or you're stupidly fast -> pimp-crow)
ad "webbed interceptor = dead interceptor" ... well it's a generalization, for weekend-pilots it's not the worst advice - but as a generalization, there are many occasions where going below 10k won't be your death (read: 500m orbit, many caldari ships, sniper, other frigs (AFs can be something between tricky and suicidal))
edit: hahahahah .. saw it just now. if the fight happens anywhere between 15-17km and the taranis can't get the sader webbed ... well, either the taranispilot sucks even more than a curse or the sader pilot has godlike reflexes and no lag and the moon is ascending.
also - killing drones in a ceptor 1v1 against a taranis? (unless the taranispilot is an idiot and launches them when he doesn't even have a tackle on the sader) ___________________

I do 211 dps with my blasteranis.. so far I've melted any ceptor I fought... crusaders, other ranises, maledictions, stilettos, etc...
