A little while back, I posted here asking about a good three ship setup for PvE missions. This is pretty much the same question, but with PvP in mind.
Both of my friends and I are... or at least have been, carebears, but are looking at testing the PvP waters. We will be taking the Agony PvP beginner course in the near future, but I would like to hear suggestions on some good three ship fleet setups.
Lets try to keep this fairly reasonable (i.e. no "Three Titans"). Using T1 ships is ideal since we will be getting blown up (a lot) while we find our balance, but I'm not against hearing T2 ideas.

One of you with EW drones wouldn't be amiss, but yeah, something like that, and T2 blasters, heat sinks, tackle gear. Vexor gangs are dangerous.
Were I to go with T2, which is my normal niche, I'd go with a curse, rapier and vaga/ishtar. That will effectively make mincemeal of anything that gets in your way.

One Rifter to tackle, one Blackbird to make them cry, and whatever else you have to kill them with.

On the other hand, if you're going into lowsec, you need all battleships and battlecruisers for fighting on gates and stations. So, consider a Scorpion for e-war, a Hurricane for tackling, and a big battleship for killing.

When you say "on the other hand", what was the previous "hand" (rifter, blackbird, gankship) relating to? Nullsec? I find it odd to think that lowsec would need bigger ships... but I know nothing about PvP in this game.

I would also say it matters on what you guys can all fly
thorax, vexor, rupture, arbitrator, blackbird would all be among my top picks for cruisers.
for bcs all the tier 2 ones, and the brutix
I would say lots of ewar and look for small gangs with global crim (so they are getting shot by sentry guns) in lowsec
and watch out for garmon

After doing a quick check of our abilities, I think I've got some good ideas for our mini-gang.
We have a Caldari pilot who should be able to handle an ewar Blackbird to shut our opponents down.
We have a drone specialist who could fly a Vexor (he usually flys a Ishtar, but that's a bit spendy for us to lose atm) and DPS well.
I should be able to tackle in a Rifter or a Thorax fairly well (I'm the newest of the three).
What do you think would be a better choice for tackling with that team, a Rifter or a Thorax? I would think the Rifter would be a lot faster, but I'm worried about it getting blown up quick once I zip into range.

If you declare war on somebody, you can fight in whatever ships you want, wherever you want. If you are doing the "pirate" thing in lowsec, then you must be wary of sentry guns and station guns, so that's why you need bigger ships.
For your first PVP experiences, I would recommend a highsec war against somebody who you think is a good match for you, rather than going into 0.0 or lowsec where the wolves are. Don't declare war on a 3-man corp, though, you'll spend days hunting and never find them.

Basically, Interceptors are for tackling. They're T2, but small, so they're not too expensive to lose either. Try them, they're built for the job.
