Is there something else out there that is not as in depth as EVE Mon, but can still allow me to plug in a "plan" to see exactly what skills I would need to reach that goal?

I'm not aware of anything else, but others may be. I would think that the nearly universal acclaim for EVEMon would chill the efforts of anyone else to re-invent that wheel.
What is it about EVEMon that you're not liking?

I did not see anything I disliked other than I was not sure of its complexity and whether or not it was overkill for my task.

Try EFT, if you're after the skills required to fit and fly a ship, then EFT will give you a list of required skills for the ship and the modules you use. For Industrial characters, EveMEEP will provide some insight into the required skills. (Edit: Both of these are quite in-depth as well though).
I'd still advise EveMon though as it will give you suggestions on learning skills for your plan as well.

You obviously need Firefox and I know it was recently updated for multiple character support......other than that, I can only direct you to the link, as I haven't used it myself.
Apparently there's another one from for iGoogle mentioned in the first thread, again I know next to nothing about it.
