Hi
Not touched on mining before, so sorry for the simple question.
Skill time wise, there doesn't seem an awful lot between the Hulk and Covetor. I see the Hulk has a much bigger cargo hold and costs much more. Would someone be kind enough to highlight the other differences?

The Hulk also comes with a much bigger price tag.
It is not as bad now with invention, but I remember prices that touched half a billion ISK.
If you want maximum mining capacity, go for the hulk. If you are on any sort of budget constrant, then you might need to look at a covetor.

A Hulk will mine a lot more than a Covetor and is a much sturdier ship.
I'll let someone who's actually owned one answer as to the Hulk's advantages.
It's disadvantages almost all have to do with it's cost.
It isn't just that the things cost in the vicinity of 100million ISK, it is that T2 ships (and the Hulk is a T2 ship) have insurance pay outs at the T1 rate. What that means is that if you get your Hulk blown up, the insurance you get will only pay for a Covetor.
There's a saying in EVE that you shouldn't fly what you can't afford to lose.
For now and the foreseeable future - I cannot afford to lose a Hulk - so I'll stick to Covetors. Losing a Covetor would be painful - but I can afford it.
For myself, RL continues to interfere with my gaming. Could I spend all the time I wanted to making ISK - then I could afford a Hulk. But I can't so I can't.

The hulks survivability is the most important thing. The covetor has 1 mid-slot, the Hulk has 4, and with the shield resistance bonus, that gives a tank that can tank, at least with my setup, a dual 1.1 mill bs rat spawn in 0.0 forever.

Are you saying that with your build you can passively tank a npc spawn of battleships indefinitely?
What does "dual 1.1 mill bs rat spawn" mean?
Can you go into more detail?

The bounty on the rat is sort of an indicator of the difficulty/dangerousness of that rat. Yes, he's saying he can tank it indefinately, but no it's not a passive tank. Hulk tanks usually require the use of a faction small shield booster for 0.0 rat spawns.
The Hulk also has a bonus to mining yield for the Exhumer skill on top of the bonus for the Mining Barge skill that it shares with the Covetor, so each strip miner is more effective. When you have good skills with it and are in a fleet with a mining director giving bonuses, you can't even go two full cycles on the strip miners without overflowing the Hulk's cargo bay.

A hulk is more expensive, mines faster and has a better tank. It's also a Tech2 ship meaning it has a very poor insurance payout if you lose it.
The Covetor is a lot cheaper and has a much better insurance payout in relation to it's cost. It mines slower and has a much smaller tank - it can handle anything in high-sec and most low-sec, but not good in 0.0 unless you have someone else tanking.
Covetor is good for high risk ninja mining as it's a lot less hurt on the wallet when it gets popped. Hulk is great for 0.0 mining ops with appropriate protection forces in place and a good escape plan.

This is absolutely correct, and is a better answer than my quick non-teacher like answer. Appologize for that, as I am not very good teaching people things, I am too impatient. 
Specifically the mid slot fittings are a t2 cap recharger, 2 passive shield hardners specific for the local rats, and most importantly, a small faction shield booster, either a Pithi or a Giisti. (Faction sounds expensive, but if you can afford a Hulk, you can afford any of these two boosters.)

The Coveter has a smaller capacitor, and "runs out of gas" when making long warps to gates or belts. It will stop in the middle of nowhere, and you have to direct it to warp again to your destination.
In a Hulk with cargo expanders, cargohold optimization rigs (yes another 100M), and 5 GSC's, you can hold roughly 21.5k of ore. This is primarily a high-sec roid crusher, for low-sec you'll need to sacrifice capacity for tank.
I sold my Covetor as my low-sec mining experiences taught me to not go there without a bunch of friends providing cover. I play a "lone-wolf" style of game and enjoy doing things solo.

Right! I also use cargo-expanders and tech I cargohold-optimization on my Hulks and have 17.199 M¦ cargospace. The tech II rigs are too expensive) If you mine with two of those Hulks (on different accounts) you will need no hauler. Because of the large cargobay it is no problem to shuttle to the station and unload. When it comes to defending you ship against rats the Hulk has tremendous capabilities. You can even sacrifice some of your fighting drones and use mining-drones instead. Just call them in when the rats come and send the fighters out.
