I run 2 accounts frequently. All you have to do is run EVE twice. Each time you run EVE, a separate instance will open up. I prefer to run EVE in windowed mode, and stagger the windows so I have one account on the left, and the other account poking out on the right.

I also prefer windowed mode, however I've a slight problem with the bottom station service view. I couldn't usually see the bottom buttons, "corp hanger" "rent office" etc.
You can run both instances of eve in full-screen. It requires alt-tabing back and forth thru desktop each time you want to switch (it's not that bad, fairly quick still). On one monitor at least. But the screen is full and I can see those buttons at the bottom.

EVEMon has a feature that adjusts the window perfectly to your monitor, look it up on options.

Just remember to have enough RAM. EVE is pretty hungry, and you'll be best off with more than 1GB if you want to avoid swapping.
A dual-core (or more) processor is also a definite must!

In windowed mode, all you really need to do is grab the title bar of the eve's window and drag it up off the top of the screen. This will allow you to see the buttons at the bottom when that window is active .
